How To make Sweet and Spicy German Style Mustard
2/3 c Mustard Seed
1/2 c Mustard, dry
1 c Water, cold
2 c Vinegar, cider
1 Onion, finely chopped
4 Garlic, clvs., minced
1/4 c Sugar, brown
2 ts Salt
1 ts Cinnamon
1/2 ts Allspice
1/2 ts Tarragon
1/4 ts Tumeric
3 ts Honey
Directions: Combine seeds and mustard with COLD water. Allow to sit overnight in the refrigerator. Combine all remaining ingredients except honey. Simmer uncovered 10-15 minutes or until liquid reduced by half. For a hotter mustard, reduce liquid by more than half. Pour this mixture through a strainer, into the mustard and seed mixture. Blenderize thoroughly. Cook in a double boiler until the consistancy of gravy. Add the honey. This will keep refrigerated several years. Many different flavors of mustard can be made by modifying this basic recipe. Substitute wine for the cold water, etc. Many other spices may be added also.....

How to Make Sweet Hot Mustard
You can make Sweet Hot mustard so easily. It can be expensive to busy, but it is easy to make.
Recipe for Sweet Hot Mustard
Try making delicious Sweet Hot Mustard at home with this easy recipe.
Ingredients
1 cup vinegar (white distilled is fine to use)
4 ounces dry mustard powder
1 cup sugar
1 large egg
Directions
Whisk together vinegar and dry mustard powder in a non-reactive bowl. Cover mustard mixture and leave overnight. In a small pot combine the mustard mixture and sugar. Use a thermometer to watch the temperature. Add 1 large egg to the mustard sugar mixture and whisk to combine. Heat the mixture until it reaches 165 degrees, and heat for a couple of minutes. Remove from stove. Store sweet hot mustard in the refrigerator for up to 4 weeks after it is made.

English Style Mustard…
1/2 cup Mustard Powder (Colman’s Brand) *loosely packed
2 tbsp Apple Cider Vinegar
1 1/2 tbsp Water
1 1/2 tbsp Sugar
1/2 tsp Salt
French “Dijon” Mustard…
3/4 cup Brown Mustard Seed
1/4 cup Dry White Wine
2 tbsp White Wine Vinegar
1-3 tbsp Water
2 tsp Salt
2 tsp Sugar
Beer Mustard…
1/4 cup Yellow Mustard Seed
1/2 cup Brown Mustard Seed
1/2 cup Apple Cider Vinegar
1 cup Beer, divided
5 tbsp Brown Sugar
1 tsp Salt
*Use sugar (sweetness) to cut the mustards bitterness and acid (wine, vinegar) to temper the heat.
**I usually make sure to let all mustards sit in the fridge for a day or two to mellow out before using.
***Salt and sugar measurements are starting points and recommendations. Be sure to adjust seasoning to taste.
