How To make Tahini Cake
1 tb Veg. margarine or peanut oil
1 c Tahini
1 c Caster sugar
1 Orange (grated rind only)
3/4 c Strained orange juice
2 1/4 c Plain flour
1 pn Salt
3 ts Baking powder
1/2 ts Bicarbonate of soda
1/2 ts Ground allspice
1/2 c Finely chopped walnuts
1/2 c Sultanas (white raisins)
This cake is frequently made during Lent as it contains no animal products. Peanut butter, the smooth, creamy variety, may be used instead of tahini. Oven temperature: 180 C (350 F) Cooking time: 45-60 minutes Grease a 20 cm (8 inch) tube pan or a 20 x 30 cm (8 x 12 inch) slab cake pan with melted margarine or oil. Chill in refrigerator until required. Beat tahini, sugar and orange rind for 10 minutes, then gradually beat in orange juice. Sift dry ingredients twice and fold into tahini mixture. Blend in walnuts and sultanas. Dust chilled cake pan with flour and turn batter into pan. Spread evenly and knock base of pan on table top to settle batter. Bake in a moderate oven for 55-60 minutes for tube pan, 45 minutes or so for slab cake. When cooked, invert cake in its pan onto cake rack and leave for 2-3 minutes before lifting pan from cake. For the Cake
1 3/4 cups (225g) all-purpose flour
1 1/2 teaspoons (8g) baking powder
1 pinch kosher salt
3/4 cup plus 2 tablespoons (200g) unsalted butter
1 cup (200g) light brown sugar, packed tightly
1 teaspoon vanilla extract
3 tablespoons (60g) tahini
3 large eggs
3 tablespoons (50ml) milk
For the Topping
3/4 cup (160g) mascarpone
2/3 cup (80g) confectioners’ sugar
1 teaspoon vanilla extract
3 tablespoons (50ml) heavy cream
4 figs, quartered (plus more as needed)
1 handful blackberries
1 teaspoon white sesame seeds, toasted lightly

It was time to share this super easy and one of my favorite cake recipes. It is also 100% vegan with no milk, butter or eggs that makes it even more tempting, right? Tahini is the main ingredient and second comes the oranges. A nutty flavor with the sense of orange mmm yum! Sometimes I even add some chocolate drops in the mix or top it with dark chocolate, a really amazing recipe. So here is the base for this recipe that you can alternate as you like with raisins, chocolate drops, almonds anything you like!

Here the recipe:
Ingredients:
400gr cake flour
100gr sugar
150gr Greek Honey
300gr Greek tahini
350ml freshly made orange juice
Orange zest from 2 oranges
Top it with:
200gr sugar powder
2 Tablespoons water or orange juice
orange zest for decoration
What to do:
Preheat the oven 350F (180 C).
Combine together, with a whisk, in a mixing bowl the sugar, the Greek Honey, the Greek tahini, the fresh orange juice and the orange zest until they are fully combined. Then add the flour little by little.
Bake your mixture in a round 9 inch cake tray (after you spray it with a non-stick oil and sprinkle it with some flour) or use some parchment paper, like I did, for 50 to 60 mins or until it's golden brown.
Let it sit for 15 mins and remove it from the tray. Let it cool on a cookie rack and top it with some powdered sugar or sugar glaze and orange zest.
(Optional Sugar glaze)
In a bowl combine the sugar powder and the orange juice or water until they are a nice creamy mixture.
