How To make Tender Flaky Biscuits
2 c Plus 2 tbsp cake flour
2 ts Baking powder
1/4 ts EACH baking soda and salt
1/2 Stick cold margarine (not
Spread) -- cut in small Cubes 3/4 c Buttermilk
Heat oven to 450. Have a baking sheet ready. In a medium bowl, mix flour, baking powder, baking soda and salt. Cut in margarine with pastry blended, or work in with fingertips until lumps are no larger than small peas. Stir in buttermilk with a fork until mixture clumps together. Press dough into a ball. On a lightly floured surface with a lightly floured rolling pin, roll dough into a 10x6-inch rectangle. With the long edge facing you, fold in both short ends so they meet in center. Fold dough in half (as if you were closing a book), forming a packet 4 layers thick. Roll dough into a 6-inch square. With a floured knife, cut dough into 16 squares, using a straight downward motion with each cut (don't saw dough). Place biscuits 1 1/2 inches apart on ungreased baking sheet. Buttermilk Biscuits Recipe Tender & Flaky | Anne's Recipe Box
Anne brakes out her recipe for tender flaky buttermilk biscuits. An all-time favorite! Secret recipe below:
Ingredients List:
2 1/2 cups All Purpose flour
1 1/2 teaspoons salt
1 teaspoon white granulated sugar
2 Tablespoons baking POWDER
3/4 teaspoons baking SODA
1/2 cup vegetable shortening
2 cups buttermilk (if you do not have buttermilk combine 1 1/4 cups whole milk and 1/4 cup white vinegar, stir together, set aside for about 10 minutes)
Preheat oven to 375 degrees. Prepare parchment lined cookie sheet.
In a large mixing bowl combine AP flour, salt, sugar, baking powder and baking soda, stir together to mix ingredients well. Using a pastry blender or fingertips cut shortening into the dry ingredients until pea size crumbs have formed. Add buttermilk stir together until combined. Turn biscuit mixture onto a floured surface. Using a pastry scraper or spatula fold the biscuit dough onto itself just a few times until it becomes a soft dough. Pat out using your hands to 1 to 1 1/2 inch thick round. Using a biscuit cutter or mason jar cut biscuit out into round biscuits, place biscuit rounds close together onto a parchment lined or sil pat baking/cookie sheet. Brush biscuit rounds with milk before placing into oven. Bake on middle rack for 9-10 minutes, rotate pan bake additional 8-9 minutes or until biscuits are golden in color. Brush biscuits with melted butter.
Depending on biscuit thickness my video yields 12 biscuits.
