How To make Tofu Provencal
1 lb Firm tofu; patted dry
and cut into 1/2" cubes 3 Garlic cloves; minced
2 md Onions; chopped
35 oz Canned plum tomatoes w/juice
:
(chopped) 1 tb Tomato paste
2 c Diced green beans
1/2 ts Dried basil
1/2 ts Dried oregano
1 Bay leaf
Pepper; to taste Heat a bit of oil in large skillet. Stir fry tofu until golden. Remove from pan and drain. Saute garlic and onions for about 5 mins. Add tomatoes, their juice and tomato paste, stir until blended. Return tofu to pan, add remaining ingredients and toss thoroughly. Cover and simmer 15 mins or until green beans are tender. If sauce is too thin boil uncovered to reduce. We LOVE this quick simple dish; sometimes I will substitute Zukes, or squash, or mushrooms for all or part of the tofu. Enjoy. A quick easy companion dish: One box of NEAR EAST Bulghur Pilaf and some fresh mushrooms. Slice mushrooms and add to sauce pan. Pour on water needed for Pilaf and bring to a boil add NE mix and simmer 15 minutes. It is GREAT! Recipe Spicy Aioli Sauce/Dip
January 2020
½ cup raw cashews, soaked in water (for approximately 2 hours)
12-oz. aseptic-packaged silken soft tofu, drained.
2 cloves garlic, roughly chopped
2 tablespoons apple cider vinegar
1 teaspoon sriracha sauce (to taste or leave it out if preferred)
½ teaspoon onion powder
½ teaspoon dried mustard powder
¼ teaspoon salt (or to taste)
¼ teaspoon black pepper (or to taste)
Add everything to a high-speed blender. Blend until rich and creamy. Adjust seasonings.
Put in the fridge until cold.
Great as a veggie dip, as a sauce on vegetables and, my favorite -- a dressing for salads -- especially romaine lettuce salads!!

French Chef Turns Provence Vegan! Bon Appétit Sans Meat!????????
Ah, bonjour mes amis!
Welcome to a little slice of Provence, served up with a twist of humor and a pinch of plant-based passion. I am your host, a dashing French gentleman in his 50’s and this, mes chers viewers, is My Vegan Provence – the channel where the lavender fields meet the land of tofu.
Now, let me whisk you away on a culinary adventure, as I unveil the secrets behind my vegan masterpieces. Imagine the classic dishes of Provence, the ones that sing with the flavors of the Mediterranean, but with a cheeky vegan spin. From bouillabaisse that swims without fish to ratatouille that dances without the traditional touch of butter, we're about to embark on a gastronomic journey that's as delightful as a stroll through Aix-en-Provence on a sunny day.
Why, you ask, have I created this channel? Pour l'amour de la cuisine, of course! And for the love of our planet. I'm here to prove that one can indulge in the rich tapestry of French cuisine while embracing the compassionate vegan lifestyle. So, tie your apron, sharpen your knives, and let's create vegan dairy that will make you say Oh là là, and vegan meats that even a true French carnivore would gaze upon with envy.
As for the basic blocks of a vegan pantry, fear not! I shall guide you through the essentials, turning your kitchen into a vegan atelier, where chickpeas are as precious as truffles in the Périgord.
