Roasted Fennel Recipe: The King Vegetable of Provence
Join my online French cooking classes ????????: Roasted fennel and cherry tomatoes simply are a match made in heaven. This recipe will make you love fennel again. pieces of fennel are blanched, lightly seasoned with salt, peper, extra virgin olive oil and then oven roasted, alongside juicy cherry tomatoes.
Get a taste of the south of france and work on your mediterranean diet with this lovely dish.
This has to be the best way on how to cook fennel. It's simple it's quick and it taste delicious, it just does not get better then that.
this fennel side dish goes very well with grilled fish such as salmon, ocean trout or other white fish.
Ingredients for 4 people ( as a side dish):
2 fennel bulbs
a dozen cherry tomato on the vine
salt and pepper to season
olive oil to sprinkle over.
Cooking times:
12 mn blanching time ( precooking the fennel in salty boiling water)
Roasting the fennel with tomatoes:
in the oven for 20 minutes at 200 degrees celsius /392 F
then finish of for a further 5 minutes under the broiler to chargrill the fennel slightly.

Herbes de Provence Green Beans - vegan, gluten free, whole 30
This simple recipe is vegan, gluten free, and whole 30 approved!
Ingredients:
Oil oil
Green Beans
Lemon
Garlic
Sliced Raw almonds
Herbes de provence seasoning
Salt to taste!
Fresh Rosemary - I forgot to include this step in the video but I added some fresh rosemary before it cooked it :)
The Herbes de Provence seasoning I used is from Trader Joe's. It's made with: Thyme, Marjoram, Savory, Rosemary, Basil, Sage, and Lavender.

Hello, hello! This green bean salad is excellent in the summer - it's perfect for a picnic or as a yummy side dish for lunch or dinner. It's very easy and quick to make, and the only unique thing you need is herbes de Provence (invest in a jar of this seasoning - you will use it on everything). You can also omit the cheese in this for a perfect Whole30-compliant side dish. Bon appetit!

What Is Cassoulet?
Cassoulet is a richly flavored bean stew with origins in southern France… and what a satisfying and delicious pot of beans it is! Here I’ve created a vegetable cassoulet that’s as creamy as can be, and brimming with the aromas of fresh herbs and vegetables.
But to me, what makes cassoulet so special is the petite, pale-green flageolet beans. Their sweet flavor and soft texture are simply addictive. Here the tender beans are slow-simmered with a mirepoix of vegetables and served with crunchy sourdough croutons – the perfect contrast to the creamy dish.
Since this cassoulet is made without the large selection of meats that usually goes into the traditional dish, it doesn’t need to be cooked both on the stove and then in the oven. This vegetable cassoulet is simmered on the stove only, making it a much less time-consuming endeavor.
So here’s to a hearty vegetable cassoulet… a bowl full of goodness!
