How To make Tomato Tart Nicoise
1/3 CORNMEAL PAStrY dough
1 Egg white, lightly beaten
2 Medium-size tomatoes
2 Eggs
1 c Part-skim milk ricotta
-cheese 1 c Shredded mozzarella cheese
6 tb Grated Parmesan cheese,
-divided 3 tb Chopped fresh oregano (Or 1
-Tbl dried), divided 1/8 ts Ground balck pepper
1 Jar marinated artichokes (6
-ounces), drained and Halved lengthwise 8 Nicoise or Gaeta olives,
-pitted Preheat oven to 400 F. On lightly floured surface, roll dough to a 14-inch round. Transfer to an 11-inch tart pan with removable bottom. Trim edges; prick botttom with tines of fork. Lane pastry shell with aluminum foil; fill with pastry weights, dried beans, or raw rice. Bake 15 minutes. Remove foil and weights. Bake 5 to 6 minutes longer or just until pastry starts to turn golden. Brush with egg white; bake 1 minute longer. Cool completely on wire rack. Reduce oven temperature to 350 F. Thinly slice 1 tomato; arrange over bottom of pastry shell; set aside. In a medium bowl, beat eggs; blend in ricotta, mozzarella, 4 tablespoons of the Parmesan, and 2 tablespoons of the fresh oregano (or 2 teaspoons of the dried). Spread
over tomato slices. Cut remaining tomato into 12 wedges. Arrange on top of cheese layer with artichoke halves and olives. Sprinkle with remaining oregano and Parmesan. Bake 40 minutes or until cheese layer is set. Cool on wire rack 10 minutes before removing outer ring. Serve warm. Makes 8 servings. [ 1001 HOME IDEAS MAGAZINE; June 1990 ]

I wanted to play with some puff pastry for a light lunch - but since I didn't want to turn the oven on, this is a great toaster oven recipe to the rescue!
Puff pastry is hands-down one of my favorite pre-made bread-y things. I've always been a pie rather than cake girl - I absolutely love flaky pastry things! These days, it's so easy to find it premade at your local grocery store in the frozen section. It's roughly the same price as those croissants that come in a cardboard tube that you pop to open, and it's infinitely flakier. I seriously recommend keeping some puff pastry in your freezer.
Tuna, tomato, and cheese makes this closer to a fancy-fied open-face tuna melt; it's absolutely delicious. Once you get your hands on some puff pastry, you can totally make your own version – do it like a pizza or a cheesesteak – the possibilities for savory pies is endless, and I promise it'll be a mini-upgrade for those date nights or self-care nights. Perfect with a beer – or in my case, a ginger cinnamon iced tea.

Niçoise Salad
Let's hop on a culinary journey to the French Riviera with our Niçoise Salad. This vibrant dish combines fresh cherry tomatoes, Kalamata olives, green beans, and canned tuna with hard-boiled eggs and a tangy Dijon vinaigrette. A taste of the Mediterranean in every bite!
And it is as easy to make as ever.
Printable recipe:
THE DRESSING:
- 1/4 cup freshly squeezed lemon juice
- 2 Tbs Dijon mustard
- 3/4 cup extra virgin olive oil
- 1 Tsp kosher salt
- 10 turns of freshly ground pepper (1/4 Tsp)
INGREDIENTS:
- 10-12 fresh cherry tomatoes
- 1 can of solid tuna in oil
- 1 cup sliced radishes
- 2 Tbs caper berries
- 20 small Cornichon pickles
- 3/4 cup green olives
- 4-5 Pepperoncini peppers
- 3/4 cup black olives (Kalamata)
- 3/4 sliced pickled red peppers
- 4-5 artichoke heart quarters
- 3 sliced small cucumbers
- 8-10 shoots steamed asparagus
- 1/4 lb steamed green beans
- boiled baby potatoes
- 2 halved boiled eggs
0:09 - Start with whisking together the dressing ingredients and set apart.
1:01 - Arrange Niçoise salad ingredients on a big platter for a colorful look. Drizzle with the dressing and sprinkle some kosher salt and freshly ground pepper.

This Tune salad is part of a range of Mediterranean food that is being made by French locals all along the Mediterranean coast. For the purists, the authentic salad nicoise should only be made with fresh produce that are in season and does not contain boiled vegetable such as potatoes nor green beans.
in this video we take a look at how to make the authentic salad nicoise from scratch. its an easy recipe that can be enjoyed by the all family and is also very healthy with lots of raw food and fresh vegetables.
Salad Nicoise, ingredient for 4 servings:
2 boiled eggs
The equivalent of 1 diced capsicum
6 lettuce leaves (butter lettuce)
3 tomatoes (sliced)
Half a cup of diced cucumber
1 small can of tuna chunks in olive oil
A handful of black olives
8 anchovies
3 spring onions ( sliced)
A handful of broad bean ( if in season)
1 small jar of marinated artichokes heart
salt, pepper and lemon juice (optional)
Half a cup of olive oil
A few fresh basil leaves to decorate
