How To make Vegetable Beef Stew
1 4 pound beef round or chuck steak -- 1 1/2 inch thick
cut into 1 1/2-inch cubes 1/3 cup flour
1 teaspoon salt
1/2 teaspoon cracked pepper
3 carrots, peeled, split lenghwise
cut in half
2 stalks celery :
cut in 1" pieces
6 small white onions
8 small new potatoes peeled
1 4 oz can sliced mushrooms :
drained
1 10 oz pkg frozen peas, corn, green beans, or
lima beans partially thawed 1 10.5 oz can condensed beef broth
1/2 cup dry red wine :
or
water 2 teaspoons brown sugar
2 te Kitchen Bouquet
1 14.5 oz can tomato wedges or slices, drained -- optional
1/4 cup flour
1/4 cup water
If beef is extra lean, thoroughly wipe cubed beef on absorbent towels to dry. If meat contains fat, quickly brown in large skillet to sear and remove fat; dr ain well.
Place beef cubes in Crock-Pot. Combine 1/3 cup flour with the salt and pepper; toss with beef to coat thoroughly. Add all vegetables except tomato wedges to Crock-Pot and mix well. Combine beef broth, wine, sugar and kitchen bouquet. Pour over meat and vegetables; stir carefully. add drained tomatoes and stir well. Cover and cook on Low for 10 to 14 hours or on High for 4 to 5 1/2 hours .
One hour before serving, turn to High. Make a smooth paste of 1/4 cup flour an d the water; stir into Crock-Pot. cover and cook until thickened.
Serves 8 to 10
Note: For better color, add half of the frozen vegetables at beginning; add rem aining half during last hour.

INGREDIENTS:
* 3 lbs beef cleaned, and cut into bite sizes
* 1/2 large onion chopped finely
* 1 tbsp garlic paste
* 1 tbsp ginger paste
* 1 tbsp herb and spice blend
* 1 tsp salt
* 1/2 tbsp all purpose seasoning, or 1 small bouillon cube
* 2 tbs olive oil for sautéing beef
Stew ingredients:
* 4 tbsp sliced oil or olive oil
* 1/2 large onion thinly sliced
* 2 tbsp herb and spice blend
* 1/2 tsp curry powder
* 1/2 tsp all purpose seasoning
* pinch of salt
* 1/2 cup tomato paste, or 2 tbsp tomato paste with 1 tbsp beetroot purée
* 1 each red, yellow, and green bell peppers
* 1 cup chopped string or green beans
* 1/2 a small head of cabbage cut to bite sizes
* 1/2 cup beef broth or water (optional to thin stew up)

Large pot
2 to 3 tablespoons cooking oil
1 1/2 pounds stew meat cut into small pieces
1 1/4 cup finely diced onion
1 tablespoons fresh finely minced garlic
2 ribs celery diced small
9 cups beef broth
1 14.5oz can crushed tomatoes good quality i used red gold
4 small yukon gold potatoes cut into small cubes

INGREDIENTS for the Classic Beef Stew Recipe:
►6 oz thick sliced bacon chopped into 1/4 wide strips
►2 - 2 1/2 lbs boneless beef chuck or good quality stew meat trimmed and cut into 1 pieces
►Salt and ground black pepper to taste
►1/4 cup all-purpose flour
►2 cups good red wine such as Soft Red or Pinot Noir (see note above)
►1 lb mushrooms thickly sliced
►4 large carrots peeled and cut into 1/2 thick pieces
►1 medium yellow onion diced
►4 garlic cloves chopped
►1 Tbsp tomato paste
►4 cups low sodium beef broth or beef stock
►2 bay leaves
►1 tsp dried thyme
►1 lb small potatoes new potatoes, or fingerling, halved or quartered
