How To make Vegetables with Peanut Sauce
THE SAUCE:
3 1/2 c -Water
3 tb Natural peanut butter
2 tb Cooking oil
1 md Onion; chopped
4 md Tomatoes; peeled, chopped
1 tb Tomato puree
1/2 Green pepper
1/2 ts Allspice
1/4 ts Thyme
Scotch Bonnet pepper to taste 1/2 ts Paprika
1 Vegetable stock cube
:
crumbled THE VEGETABLES:
2 Yellow plantains
Peanut oil; for frying 1 tb Butter (or margarine)
2 Carrots; cut lengthwise,
-- then into thin sticks 1/2 lb Green beans; trimmed
1 md Onion; sliced
Green onions; to garnish SAUCE: Heat 1 cup of the water and add peanut butter, stir and allow to cook for 10 minutes, stirring to prevent sticking, then set aside. Put the oil into the saucepan, then add the onions and cook for 5 minutes together. Add all the other sauce ingredients, and the rest of the water (2 1/2 cups) and the peanut sauce. Stir well and simmer for 20 minutes. VEGETABLES: Peel the plantain, and slice and fry in hot oil until brownish on both sides. Drain on paper towels. Put the butter (or margarine) into a pan, on a moderate heat, saute the carrots, beans and onions for 15 minutes, then serve the vegetables onto plates with the plantains, pour the sauce over the vegetables and garnish with green onions. 2 teaspoons sriracha sauce
1 clove garlic grated
1 teaspoon ginger grated
Vegetables
1 cup red bell pepper cut into strips
1 large carrot cut into matches or grated
2 green onions thinly sliced, save green tops for garnishing
2 cups broccoli florets boiled
¼ cup roasted peanuts coarsely chopped
Garnish (optional)
4 wedges lime
1 tablespoon sesame seeds
1 drizzle sesame oil
2 tablespoons crunchy onions

How to Make Veggie Spring Rolls with a Peanut Dipping Sauce
The prettiest way to eat your vegetables!
Veggie Spring Rolls & Peanut Dipping Sauce Recipe -
Ingredients:
Rice paper
Vermicelli noodles
Avocado
Sprouts
Carrots
Coriander
Cucumber
Mint
Purple cabbage
Lettuce
Basil
Edible flowers
1/3 cup natural peanut butter
Rice vinegar
Soy sauce
Honey or sugar
Garlic, grated
Water as needed, to thin
Steps:
1. Finely chop the vegetables.
2. Place the vermicelli in boiling water for 5 minutes.
3. In a bowl filled with water, quickly submerge the rice paper so it becomes malleable.
4. Fill the rice paper with your desired ingredients and roll.
5. In a bowl, combine all the ingredients and add water to achieve the desired consistency.

Thai peanut sauce with delicious veggies taught by Dr. Joel Fuhrman. This is a very simple vegan recipe to make vegetables taste good.

DR FUHRMAN VEGAN THAI PEANUT SAUCE WITH VEGGIES
For the vegetables:
1 cup chopped onions
6 cups broccoli florets
1 cup thinly sliced red bell pepper strips
2 cups trimmed snow peas
2 cups sliced shiitake mushrooms
2 cups shredded Chinese cabbage
Cook Vegetables:
Heat 1/4 cup water in a large non-stick wok or skillet, then add chopped onions and broccoli, cover and cook for 3 minutes stirring occasionally and adding additional water as needed to prevent sticking. Remove cover and add pepper strips, snow peas, shiitake mushrooms and cabbage and cook for an additional 3 - 4 minutes or until vegetables are crisp-tender. Add desired amount of sauce and continue to stir fry for 1-2 minutes to heat through.
For the Thai Peanut Sauce, blend these ingredients together:
1 cup soy or almond milk
3 Medjool or 6 regular dates, pitted
¼ cup natural, unsalted peanut butter
2 tablespoons hemp seeds
2 tablespoons unsweetened shredded coconut
1 teaspoon minced ginger
1 tablespoon lime juice
1 teaspoon red curry powder
¼ teaspoon ground turmeric
1/2 teaspoon lemon grass paste

1¼ cup (250 grams) whole-grain rice
QUICK PICKLED RED ONION
1 red onion
1 lemon the juice
½ teaspoon salt + ¼ teaspoon red pepper flakes optional
GRILLED TOFU
16 ounces (450 grams) tofu firm or extra firm
1 tablespoon olive oil
1 teaspoon salt + ¼ teaspoon black pepper optional
PEANUT SAUCE
3 tablespoons peanut butter
3 tablespoons tahini or more peanut butter
4 tablespoons soy sauce
2 tablespoons rice vinegar or lime juice, or apple cider vinegar
2 tablespoons sugar
1 teaspoon ginger grated
1 clove garlic grated
2 teaspoons sriracha or ¼ teaspoon red pepper flakes
2 tablespoons sesame oil, optional
VEGGIES
1 cup (150 grams) cucumber diced
1 cup (100 grams) red cabbage thinly sliced
1 large carrot sliced with a vegetable peeler
1 large mango diced
2 cups (60 grams) spinach
1 avocado
OPTIONAL TOPPINGS
1 teaspoon sesame seeds
1 handful cilantro
4 wedges lime
