1 thick, lean ground beef patty per person 1 1/2 inch thick slice of Idaho potato per person 1 1/2 inch thick slice of large Vidalia onion per -- person butter or margarine salt and pepper On a piece of heavily buttered foil, place beef patty, topped with potato, topped with onion. Top onion with 2 tablespoons butter or margarine. Salt and pepper heavily. Twist foil together at top to enclose package. Place packages in ovenproof dish or on baking sheet. Balsamic carmelized Vidalia onion topping: 5 sliced Vidalia sweet onions 1/4 cup balsamic vinegar 1/4 cup sugar 4 Tablespoons butter 1 teaspoon salt Put in large stock pot and cook on medium low for 1 hour.
Candied pecans: 1 cup pecans 1/4 cup brown sugar 1/2 teaspoon salt 1/2 teaspoon ground cinnamon Melt brown sugar, salt and cinnamon on medium high. Pour in pecans to coat. Set on wax paper or parchment paper to cool and harden

4 medium vidalia onions ½ teaspoon salt ½ teaspoon black pepper ¼ teaspoon cumin 1 tablespoon light brown sugar 2 teaspoons apple cider vinegar
Wash onions to remove any excess dirt or debris but do not peel. Place onions in a dish towel to dry.
Using a Crockpot, place whole onions (with skin on) inside the crockpot and cook at high for 5 hours (or low for 8 hours).
After the cooking time is complete, remove from the crockpot and allow to cook for 15-30 minutes.
Using tongs and a knife, carefully cut the end of each onion and remove the outer skins as well as any dark spots in the interior. Chop the onion into bite sized pieces using kitchen scissors or a sharp knife.
In a separate small bowl add salt, pepper, cumin, brown sugar, and mix together. Sprinkle the mixture over the chopped onion and stir well to combine. Add apple cider vinegar and mix again to incorporate all ingredients.
Transfer the mixture to a quart Mason jar. Clean and residue off of the tip before adding the lid. Place the ring in the jar and tighten by hand. Allow to cool and place in the refrigerator for up to two weeks. When ready to use, microwave or warm the desired amount over the stove until heated through. Serve warm over a steak, on top of burgers, pork, or chicken for a delicious accompaniment to any protein. Enjoy!
