Sure he massacred Shosanna's family right in front of her, but hey, guy knows not-so-terrible strudel when he sees it. Follow along this week as we make old-school Viennese apfelstrudel, and don't forget the cream.

RECIPE
*Ingredients*
1 1/2 cups bread flour (plus more for dusting, sprinkling, filling)
4 tbsp vegetable oil
2 egg whites
1/2 tsp salt
1/2 tbsp lemon juice
1/4 cup warm water (110F)
4 baking apples, peeled and sliced thinly
1/2 cup sugar
Zest of one lemon
1/2 cup raisins
1 tbsp cinnamon
1/2 cup finely chopped walnuts, hazelnuts, or almonds
1 stick butter, melted, plus more as needed
1 egg, beaten
1 cup heavy cream
1 tbsp sugar
Powdered sugar for garnish
Place flour in a large bowl - create a well in the center with your fingers, and fill with vegetable oil, egg whites, salt, and lemon juice. Mix with fingers until just combined, and sprinkle with water. Knead until a sticky dough forms. Turn out onto a lightly floured tabletop, and knead rigorously (slap onto the table about 100 times), until the dough is soft and supple. Place in a lightly oiled bowl and let rest for 30 minutes.
Combine apples, sugar, lemon zest, raisins, and cinnamon. Set aside and let liquid weep from apples.
Cover a large table with a cotton tablecloth, and liberally dust with flour. Roll out dough on tablecloth until about 24 in diameter, and using floured fists, stretch dough out as large as possible without tearing. Back on the tablecloth, gently tug at edges of dough until it's a rectangle thin enough to see the pattern of the tablecloth underneath. Trim off torn/thick edges. Drizzle with melted butter, and brush until evenly coated. Sprinkle with chopped nuts.
Place about 3/4 of apple mixture on one side of the dough rectangle, and using the tablecloth, roll the apples over onto the dough square. Brush the newly-exposed dough covering the apples with melted butter. Roll apples over again, and repeat, until apples are at the center of a long, closed roll. Pinch ends together to seal contents inside, and place seam-side down on a parchment-lined baking sheet. Brush liberally with a beaten egg.
Bake for about an hour, basting with melted butter every 10-15 minutes, as soon as the crust begins to look dry. Remove from oven when golden brown. Allow to cool at least one hour before slicing, dusting with powdered sugar, and serving.
In a small bowl, combine cream and sugar. Beat to stiff peaks, and pipe into a bowl, served alongside strudel.
The Secret Behind How Original Viennese Apple Strudel Is Made | Food Secrets Ep. 10
Viennese apple strudel is probably the most popular dessert among the many great pastries Austria has to offer. It takes special skills and ingredients to make an original apple strudel by hand. We went to Vienna, Austria to see how an original apple strudel is made.

Viennese apple strudel
Ingredients for ten people
Dough:
• 210 g plain flour
• 42,5 g table oil
• 95 g lukewarm water
• 2 g salt
• one small egg
Filling
• 1.7 kg tart apples (e.g.: Golden Delicious), cut into flakes
• 25 g lemon juice
• 65 g cinnamon sugar
• 35 g chopped walnuts
• 35 g rum raisins
• 65 g granulated sugar
• a pinch of cinnamon
• some melted butter
Butter crumbs
• 100 g breadcrumbs
• 50 g butter
• 50 g granulated sugar
• 5 g vanilla sugar
Preparation
To make the dough, place the flour in a food processor with the oil, water, a pinch of salt and the egg - if you decided on using one - and process with the dough hook until a smooth dough is formed. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least an hour.
In the meantime, cut the apples into slices and mix them with lemon juice and prepare the butter crumbs.
For the butter crumbs, heat the butter in a saucepan and toast the crumbs in it, sweeten with sugar and vanilla sugar. After resting, sprinkle the dough well with flour and roll it out in an oblong shape with a rolling pin.
Sprinkle a large cloth with flour and stretch the strudel dough as thinly as possible to a size of 60 x 70 cm. (The dough should be so thin that you can read a newspaper through it.)
Use the backs of your hands, not your fingers, so as not to poke holes in the dough. Drizzle the dough with melted butter and spread the butter crumbs on a strip of dough. Put the sliced apples on top, then the cinnamon sugar, the walnuts and finally the rum raisins.
With the help of the cloth roll up the dough and put it on a baking tray covered with baking paper and brush it again with melted butter. Bake in the preheated oven at about 200 degrees Celsius for about 30 minutes until golden brown. Let the strudel cool down, cut it open and serve it sprinkled with powdered sugar and a dollop of whipped cream.

Vegan apple strudel recipe - Viennese apple strudel
Coming from Austria I also share a big fondness for the former emperor's favourite dessert, Viennese apple strudel. In Austria we have it on it's own but here in England they serve it with custard which is a heavenly combination. So I came up with a vegan apple strudel version and a delicious and easy home-made vegan custard. From preparations to finish this dessert can be made within 30 minutes! What are you waiting for?
INGREDIENTS:
Vegan apple strudel ingredients:
40g margarine
60g breadcrumbs
75g brown sugar
400g diced cooking apples
30g hacked walnuts
1 tsp cinnamon
1 tsp vanilla extract/essence
1 tbsp lemon juice
1 cap of rum
1 puff pastry sheet
Vegan custard ingredients:
2 cups of plant-based milk
2 tsp vanilla extract/essence
50g icing sugar
2 tbsp corn starch
METHOD:
Preheat the oven to 180C (360F).
Melt 40g of margarine in a pan. Add 60g of breadcrumbs and toast slightly. If you want to avoid margarine you can also toast them in a bit of sunflower or coconut oil.
Transfer the toasted breadcrumbs to a bowl and add 75g brown sugar, 400g diced cooking apples, 30g of hacked walnuts, 1 tsp cinnamon, 1 tsp vanilla extract, 1 tbsp lemon juice and 1 cap of rum (alternatively 1 tsp of rum flavouring).
Mix together with your hands.
Roll out a puff pastry sheet (most puff pastry sheets are vegan but check before you buy). Transfer mix to the sheet and evenly spread out in the middle (basically the same way you would make a wrap). Then fold the bottom part of the sheet over the mixture, take off paper and then fold the top part over. Take off the baking paper and slightly press it down so it doesn't open up when it's baking. Then fold in both ends.
Bake in the preheated oven for 20 min or until it has a nice golden brown colour.
While the vegan apple strudel is baking prepare the vegan custard.
To a cold pan add 2 cups of plant-based milk (soy, almond or rice milk, doesn't matter), 2 tsp vanilla extract/essence, 50g icing sugar and 2 tbsp of corn starch. Whisk well (or blend) so that there are no lumps. Heat it up and cook on medium heat for 5-10 minutes. Stir continuously as it can burn easily. After a while the custard will thicken up nicely.
Take the strudel out of the oven. If you are impatient you can eat it straight away but it's recommended to let it rest a bit. Then sprinkle icing sugar and some cinnamon on top. Cut off a slice and pour the vegan custard over it. Enjoy!
