Ingredients
For the sauce
2 habanero pepper (use 1 or 1/2 for less heat)
2 large plum Tomatoes
1 onion (divided)
1-inch ginger root
3 cloves garlic
For the Chicken
2lb chicken thighs
2 tsp paprika
cayenne pepper to taste
salt and pepper to taste
For the peanut stew
6 tbsp oil
remaining half onion - sliced
1 tbsp Tomato paste
2 bay leaves
1 tsp thyme
2 tsp bouillon powder or 2 cubes
1/2 cup unsweetened Peanut butter
Salt and pepper to taste
2 to 3 cups chicken stock
handful of spinach (optional)

1.2 kg of oxtail (any protein of choice)
4 tbs of smooth peanut butter
1.5 tsp of tomato paste
2 large onions
Red & green bell peppers (1 each)
2 carrots
3-4 cloves of garlic
A thumb of ginger
~seasoning
1tbs each
Paprika powder
All purpose seasoning
Chili powder
Beef seasoning
Homemade natural spices ;
Salt to taste
Rice and beans
300g of red kidney beans
300g of jasmine rice
Salt to taste
1 tsp coconut oil

African Peanut Stew
I finally got around to doing the short version recipe vlog for African Peanut Stew after making it on a Sunday LIVE one week.
Paste. Blend all this together;
Thumb size piece of ginger.
5 garlic cloves.
Two onions.
1 tsp Paprika
1 tsp Turmeric
1 tsp Fenugreek
2 tsp Ground Coriander
2 tsp Ground Cumin
3 TBS Tomato Puree
1 or 2 Scotch Bonnets
Blend then fry, then add one tim of chopped tomatoes and 600ml of stock of your choice. Bring to the boil then simmer.
Add your 500g of sweet potato.
Add beans of your choice and maybe some chik'n.
Simmer until sweet potatoes are tender.
Add chopped spinach and stir through, also add 130g of crunchy peanut butter and the juice of half a lemon.
Season to taste and serve.

Introduction
Care for a little West African cuisine? Well, today we’d like to share with you one of the most popular dishes in both Mali and Senegal. Mafé (or Maafé) is a traditional stew or sauce (depending on the water content) eaten in Senegal, West Africa. Maafé or Tigua degué is a peanut stew served with rice. It can be made with, chicken, smoked fish, or beef. Mafé is a relatively simple Senegalese recipe to prepare with a small number of inexpensive and readily available ingredients. It is a one-pot meal that requires very little preparation. It is best to prepare the peanut and tomato sauces before you start to make the dish, so as soon as the meat is seared they are on hand to mix straight in. Maafé has a deep and earthy flavor thanks to the peanut and the chicken and carrots give it substance. The tomato paste brings a freshness and lifts the dish.

1/4 cup Tomato Paste

About Peanut Stew
Peanut stew or groundnut stew, also called maafé (Wolof, mafé, maffé, maffe), sauce d'arachide (French), tigadèguèna or domoda, is a stew that is a staple food in Western Africa. It originates from the Mandinka and Bambara people of Mali.
The proper name for it in the Mandinka language is domodah or tigadegena (lit. 'peanut butter sauce,' where tige is 'peanut,' dege is 'paste,' and na is 'sauce') in Bamanankan.
Domodah is also used by Gambians, having been borrowed from the Mandinka language. In Senegal domodah or domoda referts to flour-thickened soup or stew, which is different from mafé that uses peanut paste. It is a favorite dish among several Senegal and Gambia ethnic groups. With the huge expansion of groundnut cultivation during the colonial period, Maafe has also become a popular dish across West Africa, even outside West Africa such as in Cameroon and France.
Variants of the dish appear in the cuisine of nations throughout West Africa and Central Africa. It is very similar to groundnut soup. It may have a thicker consistency. Made from lamb, beef, chicken, or without meat, maafé is cooked with a sauce based on groundnuts, especially peanut butter/paste, and tomatoes. Peanut paste is sometimes used as an ingredient. In Ghana, groundnut stew is often accompanied by fufu.

How to make Ghana chicken Peanut butter / groundnut Soup with a twist

INGREDIENTS:
* 1 whole hen 3 Lbs (butchered and cleaned)
* Marinate chicken with tbsp salt or to taste, 1 tbsp vegetable bouillon, 1/2 tsp white pepper, 1/4 tsp aniseed, 1 tbsp Ginger garlic paste, 1 scotch bonnet chili, 1 large onion chopped, 4 basil leaves bruised.
* Boil the following vegetables: 2 Roma tomatoes, 1/2 large onion, thumb size ginger, half medium size aubergine, 1 red, and green bell pepper, 1 habanero chili, 4 more Basil leaves, 1/2 L water.
* 1 cup peanut butter dissolved into 1/2 L water
* Caramelize in some cooking oil, other 1/2 of onion, thumb size ginger, 3 cloves garlic, all sliced. Then grind all with 1/2 thumb size fresh ginger, and add to soup when oil resurfaces, or toward end of cooking.
* Give or take 1 cup water for rinsing strainer, and/or for attaining desired soup consistency.
