Church Cookbook
Pumpkin Roll Recipe:
3/4 c. all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. pumpkin pie spice
1 c. granulated sugar
3 large eggs
2/3 c. canned pumpkin
1 tsp. vanilla extract
Filling:
8 oz. cream cheese , softened
2 Tbsp. butter , softened
1 tsp. vanilla extract
1 c. powdered sugar , plus more for dusting
Instructions:
In a large bowl, whisk together the flour, salt, baking soda, cinnamon and pumpkin pie spice. In a separate bowl mix the eggs, sugar, vanilla and pumpkin until smooth. Add dry ingredients to the bowl and stir just until combined and no dry streaks remain. Spread the batter evenly in the prepared pan. Bake for 14-15 minutes until a toothpick inserted in the center comes out clean. Immediately lift the payment paper and hot cake out of the pan and onto a flat surface. While the cake is hot, starting at one of the short ends, use your hands to gently and slowly roll the cake (and parchment paper!) all the way up. Allow it to cool completely. While the cake roll is cooling, mix the cream cheese, butter, vanilla, and powdered sugar together with an electric mixer until it is fluffy and smooth. Once the cake roll is cooled completely, unroll it very carefully. Gently smooth the filling in an even layer over the cake. Roll up the cake without the parchment paper. Cover with plastic wrap and refrigerate for at least 1 hour, before serving. Dust the top with powdered sugar, if desired. You could use a duster, spoon, or even your fingers to lightly sprinkle it on top of the roll. Cut into slices and serve.Store in the fridge, covered, for up to three days.
Mississippi Mud Cake Recipe:
1 c. butter
1⁄2 c. cocoa
2 c. sugar
4 large eggs, slightly beaten
1 1⁄2 c. all-purpose flour
1 dash salt
1 tsp vanilla extract
1 small jar Marshmallow cream
CHOCOLATE FROSTING
1 - 16 oz. package powdered sugar, sifted
1⁄2 c. milk
1⁄3 c. cocoa
1⁄4 c. softened butter
Preheat oven to 350°F. Lightly grease a 9x13 inch pan. Melt the butter in a medium saucepan. Add the cocoa and stir. Remove from the heat. Pour butter mixture into a mixing bowl and add sugar and eggs. Mix until blended. Add the vanilla. Mix in the flour and salt. Stir in the pecans. Put batter into prepared pan and cook for 35 minutes or until done. Remove from oven and sprinkle with marshmallows. Cool in the pan on a wire rack. For the frosting: Combine all of the ingredients and mix until smooth. Spread frosting on cooled cake. If your frosting is too thick, add more milk.

Mississippi Mud Pie
Ingredients
1 cup all-purpose flour
1 cup chopped pecans
1/2 cup butter, softened
1 package (5.9 ounces) instant chocolate pudding mix
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
1 container (16 ounces) frozen whipped topping, thawed, divided
Toasted chopped pecans and chocolate curls, optional
Directions
1. Preheat oven to 350°. In a large bowl, beat flour, pecans and butter until blended. Press into the bottom of a 13x9-in. baking dish. Bake until golden brown, about 15-20 minutes. Remove to a wire rack; cool completely.
2. Make chocolate pudding according to package directions; let stand 5 minutes. In a bowl, beat cream cheese, sugar, and whipped topping until smooth.. Spread cream cheese mixture over cooled crust. Spread pudding over cream cheese layer; top with remaining whipped topping. If desired, top with additional pecans and chocolate curls.

A heart breaking story of hunger, and survival in this extremely impoverished and densely populated commune located in the Port-au-Prince metropolitan area in Haiti. Cité Soleil originally developed as a shanty town and grew to an estimated 200,000 to 400,000 residents, the majority of whom live in extreme poverty. The area is generally regarded as one of the poorest and most dangerous areas of the Western Hemisphere and it is one of the biggest slums in the world.
