How To make White Wine Marinated Squid
3/4 c White wine
1/4 c Lemon juice
1/4 c Olive oil
2 tb Minced garlic
1/4 c Minced onions
1 ts White pepper
1/2 ts Ground coriander
2 ts Salt
1 1/2 c Squid; body cut into rounds,
- tentacles left whole PLACE ALL INGREDIENTS except squid in a 1-quart pot and bring to a boil over high heat on the stove. Add the squid, cook 30 seconds and immediately remove from the heat. Pour the contents of the pot into a glass bowl, cover with a plate and let cool to room temperature. Place in refrigerator until chilled. Serve over lettuce or chilled pasta.

INGREDIENTS :
1.2 kg mussels
salt for boil
5 cloves garlic, minced
1 tbsp. gochujang chilli paste
2-3 tbsp white wine
salt to taste
black pepper
half lemon juice
red chilli optional
chopped parsley
chopped spring onion
30 grams butter
2 tbsp olive oil.

Calamari and Watercress Sauté
This is a really simple an awesome calamari recipe that you can put together in minutes. I love using watercress in this recipe as it is high in antioxidants, vitamin K, and vitamin C. Plus it is really spicy and creates an awesome flavor profile for the recipe. Add some fresh tomatoes, oregano, and white wine and your all set for an awesome appetizer/entree. Enjoy guys!

Ingredients:
1 # Calamari
2 Oz. Olive Oil
2 Oz. Sliced Garlic
1 Shallot Sliced
Fresh Oregano
1/2 Pint Red Grape Tomato Sliced
1/2 Pint Yellow Grape Tomato Sliced
Fresh Watercress
8 Oz. White Wine
2 Oz. Butter
Juice of 2 Limes
Salt and Pepper
Procedure:
1. In a large sauce pan, heat the olive oil over medium heat for 1 minute. Add the garlic and shallots and cook for 2-3 minutes stirring constantly.
2. Add the wine, lime juice, and oregano and cook for an additional 1-2 minutes to burn off the alcohol.
3. Add the calamari and tomatoes and cook for 3-4 minutes. Don't cook any longer as the calamari will turn really tough. Nobody wants to eat rubber bands.
4. Fold in the butter,stir till combined, add the watercress last. Toss the watercress with the calamari/sauce for just moments just to wilt.
5. Plate and serve quickly.

In Korea, we like to eat it simply boiled with cho-gochujang sauce or pan-fried in a tangy gochujang sauce! I also though it would be a good opportunity to show you how to clean squid.
