-Bon Appetit 2 c Flour
2 ts Cinnamon;3 if desired
2 ts Baking soda
1 ts Salt
1/2 ts Baking powder
3 Eggs
2 c Sugar
3/4 c Vegetable oil
2 c Zucchini;grated
-well drained 1 1/2 c Walnuts;chopped
1/2 c Raisions;(optional)
Preheat oven to 350. Sift first 5 ingredients. Beat eggs in a large bowl until light. Gradually add sugar and beat until thick and lemon colored. Add oil in thin stream and beat well. Mix in zucchini, nuts and raisins. Add sifted dry ingredients and blend well. Turn into greased and floured 12-cup bundt pan or 2 8x4 inch loaf pans. Bake until tester inserted in
center comes out clean, about 50 minutes. Let cool 5 minutes before turning out onto rack. Cool completely before slicing. Makes 1 bundt cake or 2 loaves .from Bon Appetit....years ago

1 cup vegetable oil
2 1/4 cups granulated sugar
3 tsp vanilla extract

This quick bread is another brilliant (and easy) way to use up a garden full of zucchini. These tasty loaves (made with cake mix!) are freezer-friendly, so bake up a few batches and save for later.

-1 box Betty Crocker™ SuperMoist™ yellow cake mix
-1 tablespoon ground cinnamon
-1/2 cup vegetable oil
-1/4 cup milk or water
-3 eggs
-2 cups coarsely shredded zucchini (about 2 medium)
Steps
1. Heat oven to 350°F. Spray bottoms only of two 8x4-inch loaf pans with cooking spray.
2. In large bowl, stir cake mix, cinnamon, oil, milk and eggs until well blended. Add zucchini; mix well. Divide batter evenly between pans.
3. Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans to cooling rack. Cool completely, about 1 hour. Wrap tightly, and store at room temperature up to 2 days.
