How To make Cherry Sweet Potato Bread
1 3/4 c Flour
1 ts Baking soda
1 ts Cinnamon
3 Eggs
1/2 c Milk
1/2 c Maraschino cherries
15 oz Canned sweet potato
= (or yams); drained 1/4 c Chopped pecans or walnuts
1 1/2 c Sugar
1/4 ts Salt
1 ts Pumpkin spice
3/4 c Vegetable oil
1/4 c Raisins
1 ts Vanilla
Combine and mix flour, sugar, salt, soda, cinnamon, pumpkin spice well. Add eggs, oil and milk stirring until smooth. Blend in sweet potatoes, raisins, nuts, cherries and vanilla. Pour into well greased bread pan that has been lightly floured. Bake approximately 1 hour at 325 (check at 50 minutes), checking by inserting tester to be sure it is

Vegan Sweet Potato Bread Recipe Easy | Potato Bread Recipe | EASY RICE COOKER RECIPES
NOTES:
* 1 cup = 250 ml
* Rice cooker capacity = 1.8 litre or 10 cups

INGREDIENTS:
• 3/4 cup (75g) MASHED SWEET POTATO
• 1 cup (140g) ALL PURPOSE FLOUR
• 2/3 cup (115g) WHOLE WHEAT FLOUR
• 1/2 cup (100g) CANE SUGAR
• 2 tsp (8g) BAKING POWDER
• 1/4 tsp (2g) BAKING SODA
• 1/2 tsp (3g) SALT
• 1 1/2 tsp (4g) GROUND CINNAMON
• 3/4 cup (185ml) SOY MILK (unsweetened)
• 1 tsp (4g) APPLE CIDER VINEGAR
• 1 cup (130g) DRIED CRANBERRIES
• 3 tbsp (45g) COCONUT OIL (melted)
HOW TO MAKE IT:
1. Cook 1-2 large sweet potato (bake/steam/microwave/boil) and peel the skin then mashed with a fork. Measure out amount needed (if using measuring cups, packed cup and leveled)
2. In large mixing bowl, whisk together flours, baking powder, baking soda, salt, cinnamon and pumpkin pie until incorporated
3. In separate mixing bowl, combine soy milk, apple cider vinegar, coconut oil and cranberries
4. Add mashed potato and milk mixture into flour mixture, then fold just until incorporated; do not over mix. Batter should be very thick because moisture will release from potato
5. Greased or lined pot/pan then add batter. Smooth out the top
6. Bake for 2 bake cycles (60 min) then check. Rice Cookers varied so bake longer as needed. Mine took 4 bake cycles (120 min)
7. Cool for 20-30 minutes before removing from pan. Enjoy!
OVEN BAKING:
Bake in lined pan, in pre-heat oven of 350F (180C) for 50-60 minutes. Ovens varied so check about 45 minutes and bake longer as needed

Mimi's Holiday Sweet Potato Balls
Ingredients:
2 Cups sweet potatoes, cooked or canned (drained)
1/2 Cup brown sugar in cereal size bowl
1 Cup crushed cornflakes mixed with 2 Tbls melted butter in cereal size bowl
Mini marshmallows
Cinnamon
Crushed pecans (optional)
Preheat oven to 350 F. In a small bowl, slightly mash sweet potatoes. Form potatoes into golf size balls while wrapping around 2-3 miniature marshmallows. Roll the balls in brown sugar until covered and then roll in cornflakes mixture. Place on a non-stick cookie sheet and form a small hole the size of a thimble in the top of each ball with your finger or a small round tip object. Bake in 350 F oven for 15 minutes until balls are crisp and slightly browned. Remove from oven and insert 2-3 miniature marshmallows in the top hole of each ball. Sprinkle the tops of each ball with cinnamon and place pan back in the oven for 5 more minutes. When marshmallows are melted and browned, remove from the oven. Serve the little sweet potato treats as individual portions with your Holiday Dinner!
