2 c Unsifted flour 1/3 c Sugar 1 tb Baking powder 1/2 ts Ground cinnamon (or more) 1/2 ts Salt 1 Egg 3/4 c Apple juice 1/3 c Vegetable oil 1 1/3 c Ready-to-use mince filling 1 c Apples, chopped fine Preheat oven to 400 F. Grease 18 muffin cups or line with paper baking cups. In large bowl, combine all ingreds.; stir only until all ingreds. are blended. Spoon equal portions into prepared muffin cups. Bake 18 to 20 min. or until lightly browned. Cool 1 min. Remove from muffin cups. Top with Apple Cinnamon Glaze. Serve warm. APPLE CINNAMON GLAZE: In small bowl, mix 3/4 c. confectioners sugar, 1/8 ts. ground cinnamon, and 5 to 6 ts. apple juice. Drizzle over warm muffins. Hint: Use ice cream scoop (or #20 food scoop) to fill muffin cups. Makes life much easier.

ingredients for the courgette and cheese muffins: 200g of flaked oats 500g of yoghurt ( any non-flavoured yoghurt would do) 5 eggs 2 grated courgettes mustard powder parsley and grated cheddar cheese method: on a weighing scale add 200g of flaked oats in the bowl along with parsley and mustard powder next, add 500g of yoghurt and add 5 eggs into the same bowl. thirdly great the 2 courgettes and mix them all then add grated cheddar cheese then use an ice cream scooper to scope the mixture into cupcakes moulds. lastly, sprinkle grated cheese on top and bake the muffins in an oven until it's cooked inside and the cheese is all melted. ingredients for the apple and mince meat muffins ( this doesn't contain meat) 200g of flaked oats 500g of greek yoghurt 3 chopped apples cinnamon 5tsp of sugar 3 handfuls of sultanas 6tbsp of minced meat ( it's not actual meat and a sprinkle of hazelnuts method: in a bowl add 200g of flaked oats, 500g of greek yoghurt and 5 eggs and mix it. next peel three apples, take out the core and chop them into little bits. add them into the bowl with some cinnamon, 3 handfuls of sultanas and 6 tbsp of minced meat. mix that all together then use the ice cream scooper to scope the mixture into the cupcake moulds. lastly, sprinkle hazelnut flakes on top of the muffins and them in an oven until fully cooked through
