Mini Cinnamon Muffins
How to make Mini Cinnamon Muffins! These sweet miniature cinnamon muffins have soft and fluffy vanilla centers and are topped with melted butter and sprinkled with cinnamon and sugar.

Ingredients
1 ½ cups all purpose flour (185g)
2/3 cup sugar (135g)
2 teaspoon baking powder
2 teaspoon cornstarch
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon nutmeg
1 large egg lightly beaten
1 teaspoon vanilla
½ cup buttermilk* (120ml)
6 Tablespoons unsalted butter melted and cooled (85g)
Topping
4 Tablespoons salted butter melted (60g)
4 Tablespoons sugar
2 teaspoon ground cinnamon
Instructions
00:00 Introduction
Preheat oven to 375F (190C) and line a 24 count mini muffin tin with paper liners or lightly grease and flour.
00:26 Combine flour, sugar, baking powder, cornstarch salt, cinnamon, and nutmeg in a large bowl and whisk until well-combined.
00:50 In a separate bowl, whisk together egg, vanilla, and buttermilk.
While still whisking the wet ingredients, slowly pour butter until incorporated (mixture may curdle slightly).
02:20 Add dry ingredients to wet and, using a spatula, gently stir ingredients together until just combined -- do not over-mix or your muffins will be dense and dry!
02:44 Portion muffin batter into prepared mini muffin tin, filling each liner 3/4 of the way full.
Transfer to 375F (190C) oven and bake for 11-13 minutes or until a toothpick inserted in the center comes out with moist crumbs (not wet batter, there should be crumbs or the toothpick should be clean, but don't over-bake muffins or they will be dry).
Topping
03:23 Prepare your topping by brushing butter over each muffin while still warm.
Stir together sugar and ground cinnamon and then sprinkle over each muffin.
Serve warm and enjoy!

Cinnamon-Sugar Topped Muffins
These simple yet tasty muffins are sure to round out your breakfast! Home-made and easy to make, they really hit the spot. I've been making these for over 30 years...give them a try next time you want to bake something a little special!! Recipe follows:
1 egg
3/4 cup milk
1/2 cup oil
2 cups self-rising flour
1/3 cup sugar
Mix egg, milk, and oil in a bowl. Add flour and sugar. Stir just until flour is incorporated into the liquid--there will still be some lumps.
Spray 12 cup muffin tin with non-stick spray. Fill cups about half-full. Place in 400 degree oven for 20 minutes.
1/2 cup sugar
1 tsp cinnamon
1/2 stick melted butter
Remove hot muffins from pan and dunk into melted butter, then into cinnamon-sugar mixture. Place on large plate...enjoy!!!

Apple Crumble Muffins:
Apple Cinnamon Muffins (with Cinnamon Sugar Topping):
We'll start with apple muffins with a crumble topping (also known as a streusel topping)! This topping comes together with an easy mix of flour, granulated sugar, brown sugar, butter, cinnamon, and salt.
The key to a great crumble topping is cold butter! This way the butter incorporates into the flour like it would in a pie crust, and results in a tender-crisp texture. It's completely delicious! You'll make this particular topping before making the apple muffin batter.
Here's how you make a cinnamon crumble for apple muffins:
1. Mix together flour, sugar, salt, and cinnamon.
2. Then, add the butter and cut it into the dry mixture until the mixture begins to resemble a texture similar to damp sand.
NOTE: In the video, I misspoke! I said you would add the sugar to the crumble topping using a teaspoon measure. This is wrong! You'll actually be using tablespoon measures for these ingredients. Just follow the printer-friendly recipe linked to above!
That's it! So easy. Now, on to the second topping -- Apple Muffins with Cinnamon-Sugar on top! These muffins are both so good, it will be hard to choose just one.
For Apple Muffins with a cinnamon sugar topping, you'll need granulated sugar, cinnamon, and salt. You'll make this topping after the apples have finished baking.
Here's how you make the cinnamon sugar topping:
1. In a small bowl with granulated sugar, cinnamon, and a pinch of salt.
2. Once the apples are baked, dip the top of each muffin in the butter and then roll it in the cinnamon-sugar mixture to generously coat the top.
Toppings are great and all, but what about that perfectly tender, fluffy, cinnamon-spiced Apple Muffin?! Time to talk batter!
This muffin batter comes together so easy. Here's what you'll need:
- Apples | The recommended apples for making Apple Cinnamon Muffins are Golden Delicious. They are a softer apple variety and perfect for baking recipes that don’t require a lot of time in the oven.
- Flour | Only use all-purpose flour for this recipe.
- Brown Sugar | This muffin batter recipe was developed using light brown sugar, but if you only have dark brown sugar on hand, feel free to use it here!
- Unsalted Butter | I always recommend using unsalted butter as it will give you complete control over your sodium levels and flavor.
- Baking Powder | Be sure not to confuse baking powder with baking soda! Only baking powder should be used for this Apple Cinnamon Muffin Recipe.
- Milk | Whole milk is best, but if you only have 2% milk, it can be used in this recipe.
- Salt
- Cinnamon
- Eggs
Now, here's how you make the best Apple Muffins from scratch!
1. Mix together flour, baking powder, salt, and cinnamon in a medium-sized mixing bowl.
2. Mix together brown sugar, eggs, milk, and vanilla in a large mixing bowl. Add the melted butter and mix again until well blended.
3. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix the batter!
4. Toss peeled and diced apples with 2 tablespoons of flour and then fold them into the muffin batter.
5. Have ready a 12-cup muffin tin lined with muffin liners and spritzed with nonstick cooking spray. Fill the muffin cavities about two-thirds of the way full and bake the Apple Cinnamon Muffins at 425°F for about 15 minutes! Allow to cool slightly.
These muffins are perfect for celebrating the arrival of fall or really, during any season! The kids absolutely love them (and so do the adults). DONUT MUFFINS | Tastes **EXACTLY** Like a Cinnamon-Sugar Cake Donut!
There's no denying donuts rule the roost when it comes to sweet breakfast treats. But let's face it: They're a lot of work. Make the dough, roll the dough, cut the dough, ready the oil, fry the dough...enough already! Especially when there's a much easier, made from scratch recipe that's delicious enough to rival any cake donut on the block. Cinnamon Muffins, anyone?

These easy cinnamon muffins are simple to make and magically come equipped with both the texture and flavor of a cinnamon-sugar cake donut!
Here's what you'll need to make them:
FOR THE MUFFINS:
2 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon fine sea salt
1 teaspoon ground cinnamon
1 cup granulated sugar
2/3 cup (about 11 tablespoons) room temperature, unsalted butter
2 large eggs
1 teaspoon pure vanilla extract
1 cup whole milk
FOR THE CINNAMON-SUGAR TOPPING:
1/3 cup granulated sugar
1/2 teaspoon ground cinnamon
1/3 cup unsalted butter, melted in a small bowl
DIRECTIONS:
Preheat the oven to 350°F. Line a standard-sized muffin tin with muffin liners and lightly spritz with nonstick cooking spray.
In a medium-sized mixing bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
In a large bowl, combine the butter and the sugar and mix on medium-high speed using a handheld mixer for 3-4 minutes, or until the mixture is light and fluffy. You could also use a stand mixer fitted with a paddle attachment.
Add the eggs, one at a time, scraping down the sides of the bowl and mixing well after each addition. Add the vanilla and mix once more.
Mixing on low, alternate adding the dry ingredients and the milk in three additions. Then, scrape down the sides of the bowl and mix once more.
Fill the muffin cups two-thirds of the way full and bake for 25 minutes, or until the center of the muffins spring back ever so slightly when gently poked.
While the muffins are baking, combine the sugar and cinnamon for the topping in a small bowl, and set aside.
Once cool enough to handle, dip the top of the muffin in the melted butter and then dip it into the cinnamon-sugar and swirl until well-coated. Serve and enjoy.

Cinnamon Pancake Mini Muffins Recipe | The Sweetest Journey
Learn how to make this fun breakfast addition by turning pancakes into mini muffins! ????
Ingredients:
3/4 Cup All Purpose Flour (105g)
1 Teaspoon Baking Powder (5g)
1/4 Teaspoon Baking Soda (1.25g)
1 Teaspoon Cinnamon Powder (2.6g)
1 Egg
1/2 Cup Buttermilk (120ml)
1 Tablespoon Butter, melted (12.5g)
1/2 Teaspoon Vanilla Extract (2ml)
1 Tablespoon Honey (15ml)
Directions:
1. In a bowl, whisk together the flour, baking powder, baking soda, and cinnamon. Set aside. In another bowl, whisk the egg. Add the buttermilk, melted butter, vanilla, and honey. Beat until well combined. Add the dry ingredients to the mixture, mixing just until combined.
2. Grease a mini muffin tin with cooking spray or butter. Spoon the batter into the tin. Bake in a preheated oven at 350°F for 10 minutes. Serve warm.
Optional: Spread butter over tops of muffins while still warm.
