How To make Cinnamon Oatmeal Muffins
3/4 c Skim or 2% milk
1 c Oatmeal, uncooked
1/2 c Vegetable oil
2 Egg whites
1/2 c Brown sugar
1/2 ts Cinnamon
3 ts Baking powder
1 c Flour
1 tb Grated orange zest
Peeled and chopped bits of apple, optional Preheat oven to 400 F. Line 12 muffin cups with paper liners. Combine and mix milk and oatmeal. Add oil and egg whites, sugar and spice and zest. Stir until blended. Combine flour and baking powder, add to mixture, along with apple bits and stir just until blended. Bake 15-18 minutes. Makes 12 muffins.

Today we’re going to be making apple cinnamon oat muffins. I’ve always loved oat recipes even before losing weight, and these muffins are no exception. Super simple to make and really delicious, they are a great way to satisfy those sweet cravings without going overboard on your diet. These come out to just over 200 calories per muffin, and only took about 10 active minutes in the kitchen from start to finish. Being higher in fiber, these muffins are sure to fill you up well when you’re looking for a quick and healthy snack. Ingredients:
2 cups instant oatmeal *
1 cup milk
1 cup brown sugar
1 cup canola oil
1 tsp baking soda
1 tsp salt
2 tsp baking powder
2 cups flour
Instructions:
Mix well. Stir in blueberries, raisins, raspberries, chocolate chips, or apples. Applesauce can be used as a substitute for the oil. Bake at 400º F until golden, which is approximately 15 minutes.
Yield: 24 muffins

Makes 12 muffins
Ingredients:
For the muffins:
2 Apples
1 Egg, large
1/2 cup (120ml) Milk
1/3 cup (80ml) vegetable oil
1¼ cups (160g) Flour
2 teaspoons Baking powder
1/4 teaspoon Salt
3/4 cup (150g) Sugar
1 teaspoon Vanilla extract
For the crumble:
1/4 cup (60g) Butter, cold
1/2 cup (65g) Flour
1/2 cup (100g) brown Sugar
1 teaspoon Cinnamon
Directions:
1. Preheat oven to 350F (175C). Line a 12-cup muffin pan with muffins liners, spray the cups with oil (optional) and set aside.
2. Make the muffins: In a bowl mix milk, oil, egg and vanilla extract. Set aside.
3. In a separate bowl, combine flour, baking powder, sugar and salt.
4. Peel the apples and cut into small chunks. Place apple chunks into the flour mixture and toss well to ensure the apples are well coated.
5. Pour the wet mixture into the dry mixture and mix until combined.
6. Scoop the batter into muffin cups until 3/4 full.
7. Make the crumble: Combine the ingredients for the crumble topping together in a small bowl and crumble together using your finger tips.
8. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
9. Let cool before serving.
