How To make Oatmeal Cinnamon Scones
1/4 c Oatmeal
1 t Salt
1 3/4 c Flour
6 tb Butter, cut into 1/2-inch
-cubes 1/4 c Sugar
1 t Cinnamon
1/2 c Buttermilk OR:
1/2 c Cream OR:
1/2 c Milk
1/4 c Brown sugar, packed
1 lg Egg, beaten
1 1/2 ts Baking powder (dbl acting)
2 ts Vanilla extract
1 t Baking soda
1/8 ts Grated orange zest
Position rack in the center of the oven and preheat to 375 degrees. Into a large bowl, sift the flour,
sugars, baking powder, baking soda, and salt. Add oatmeal & mix together. Distribute the butter cubes over the flour mixture. Using your fingertips, quickly rub the butter cutes into the flour mixture, until the mixture resembles coarse meal. In a medium bowl, stir together the buttermilk, egg, vanilla, & zest. Add the liquid mixture to the flour mixture. With a large rubber spatula, using as few strokes as possible, stir gently until the dough is moistened and begins to cling together. Handling the dough as little as possible, stir until all the ingredients are completely combined. Using a 1/3-c. measuring cup, drop the dough onto an ungreased baking sheet, leaving at least 1-inch between the scones. Bake 16 to 18 minutes, until the scones are golden brown. Cool the scones on the baking sheet set on a wire rack for 5 minutes. Using a mental spatula, transfer the scones to the wire rack and cool completely. Serve warm or store completely cooled scones in an airtight container at room temperature.

Top tip - make an extra big batch and freeze the cut out dough. Then whenever you’re feeling peckish pop in the oven and cook until golden and warm.

Delish Maple Glaze Scones
These cinnamon oat scones with maple glaze are the perfect fire-side treat.
HOW TO: Bake the Best Oatmeal, Banana, Chocolate Chip Scones
Shawna's Oatmeal/Banana/Chocolate Chip Scone RECIPE:
1 & 2/3 Cup Flour
1/4 Cup Brown Sugar, packed (about 1/2 cup loose)
3/4 Teaspoon Ground Cinnamon
1 Tablespoon Baking Powder
3/4-1 Teaspoon Sea Salt (I use 1 Tsp)
1 & 1/3 Cups Old Fashioned Rolled Oats
1 & 1/2-2 Sticks Unsalted Butter (I use 2 sticks, chilled)
1-1&1/2 Teaspoons Vanilla Extract
1 Cup Overripe Banana OR 2 Large Overripe Bananas (mashed)
1/2 Cup Ghirardelli 60% Cacao Chocolate Chips
1 Cup Walnuts (chopped, but still chunky)
1 to 3 Tablespoons of Milk (Depending on how moist the banana makes the dough.)
*NOTE: Taste the dough to determine whether or not you need an extra sprinkle of sea salt or vanilla extract. If you only have 1 banana, increase the milk (3 to 6 tablespoons) and your scones will still turn out delicious!
1.) Preheat oven to 425 degrees (I turn my oven on right before I start rolling the dough into balls).
2.) In a large mixing bowl combine: flour, brown sugar, cinnamon, baking powder, sea salt and oats. Mix to combine and break up any clumps of brown sugar, if clumpy.
3.) Chop up the butter into little cubes. Then, add the vanilla and the butter into the dry mixture by stirring and mashing, stirring and mashing until well blended, but still very chunky.
4.) Add in mashed banana, chocolate chips and walnuts. Stir and mash, stir and mash until well blended, but still chunky. Add milk, only if needed. Then, stir and mash again.
5.) Wash your hands & turn on the oven.
6.) Scoop a large, heaping spoonful of dough into your hands and roll into a ball. Transfer to a large baking dish or cookie sheet.
7.) Bake 15 to 18 minutes, depending on your oven and how large you roll the balls of dough. If not slightly browning after 15 minutes, bake 1 minute longer and check again. Using a spatula, transfer to a dish and allow to cool for 15 minutes. ENJOY!
*Yields about 12 large scones.
