How To make Lamb Shanks with Lentils
6 md Lamb shanks, about 8 oz each
2 T Vegetable oil
1/2 c Water
2 t Minced garlic
2 t Salt
1/2 t Dried oregano
Pepper to taste 1 1/2 c Lentils
3 c Water
1 sm Onion, stuffed with 3 whole
-cloves 1/2 c Chopped celery
1 Bay leaf
6 Thin lemon slices
From "The Complete Book of Greek Cooking," edited by Katherine R. Boulukos (Harper-Collins). In a large skillet, brown lamb shanks in oilve oil. Add 1/2 cup water, garlic, 1/2 teaspoon salt, oregano and pepper. Cook, covered, over low heat for one hour, or until tender. Rinse lentils and drain. In a medium saucepan, combine lentils, 3 cups water, onion, celery, bay leaf and 1-1/2 teaspoons of salt. Simmer, uncovered, 50-60 minutes, or until vegetables are tender. Pour mixture into greased baking dish. Top with meat, lemon slices. Bake 20-25 minutes, until liquid is absorbed and lentils are tender. Discard onion and bay leaf.

4 Lamb Shanks
Rub down with oil
Season with:
1 tsp cardamom
1/2 tsp all spice
1 tsp turmeric
1 tsp paprika
1 tsp onion & garlic
Salt to taste ( I did 2 tsp )
1 large onion
4-6 cardamom pods
1 bay leaf
1 cinnamon stick
8-10 pimento seeds
Pressure cook on high for 40-50 minutes
You can also do this on the stove top, bring to a boil and drop to a simmer (I’d say at least 2-4 hours)
Rice:
2 cups basmati rice
3 cups lamb stock
1 tsp saffron
1 tsp salt
Salsa:
Bunch of cilantro
6 cloves raw or cooked garlic
1/4 cup olive oil
1 tomato
3 Serano peppers (depends on your preference)

Ingredients:
Lamb Shanks - 3
Salt - To Taste
Black Pepper - 1 TBSP
Paprika - 1 & 1/2 TBSP
Chopped Onions - 200gm
Diced Potatoes - 325gm
Baby Carrots - 220gm
Ginger Garlic Paste - 1 TBSP
Beef Stock - 2 Cups
Tomato Puree - 1 TBSP
Thyme - 1 Stem
Rosemary - 1 Stem
Sliced Lemon - 1
Method:
1) First we are gonna season our lamb shank. Add generous amount of Salt, Black pepper and Paprika. Give it a rub and properly massage both sides. Let it marinate for 20 minutes.
2) Grab your baking tray. Make a bed of chopped onions.
spread them equally and then place your lamb shanks on top of that onion bed. Add diced potatoes and baby carrots.
3) Next, add Ginger Garlic paste. 2 Cups of beef broth because that is
going to give it that juicy flavour and keep it tender. 1 TBSP of Tomato puree. Add Thyme and Rosemary to get that perfect aroma from your lambs shanks.
4) Lastly, add sliced lemon on top and cover your baking tray with foil paper. Make sure all sides are tightly closed.
5) Bake it in the oven for 1 hour at 200C or 400F.
6) After 1 hour, take it out. Uncover it, give the veges and gravy a mix. Flip the lambs shanks and wrap it again.
7) We are going to bake it again but this time for 2 hours.
8) After two hours.. take your lamb shanks out of the oven and get ready to smell the awesomeness. Put your lamb shank in a plate, drizzle the gravy along with the veges on top. Add in your Christmas decoration and your perfect, juicy, tender, delicious Lamb Shanks for Christmas Dinner are ready to serve.
