How to Make Almond Flour Crepes | Grain Free | Dairy Free | SCD Legal
Whether you’re grain free & dairy free or you’re just looking for a healthier version of the famous French Crepe - look no further! This recipe is easy to throw together and just takes a little bit of finesse to master the technique... but once you do, it’s SO worth it!
The recipe is as follows...
Almond Flour Crepes
2 cups almond flour
1 1/2 cup almond milk (homemade it you can! Link below vvv)
2 eggs
1/2 tsp baking soda
(1/2 tsp) / Salt to taste
Blend the almond milk, eggs, baking soda and salt in your blender until well incorporated. Slowly add your almond flour, little by little, until fully blended without clumps. Heat your frying pan on high. Ladle some batter onto the hot pan. Turn the heat to low as your crepe spreads out and begins to cook. Wait about a minute. Once the top looks a bit drier, as if the batter has slightly cooked on top, begin to carefully lift the edges with a spatula. Now using the swiping motion in the video begin to lift the entire crepe. Flip. Cook for a few more seconds to 1 minute. Remove. Enjoy with homemade jam, cheese, honey & fruit, eggs & avocado, or anything else that sounds good to you!

Ingredients:
2 eggs
1 1/2 cups of milk (2%, 1%, Whole) (355ml)
1 tsp. of canola or vegetable oil (or one Tbsp. of butter, melted) (5ml)
1 cup of all-purpose flour (120g)
1/4 tsp. of salt (1g) (or 1/2 tsp. for savory) (2g)
1 tsp. vanilla extract (for sweet) (5ml)
1 Tbsp. of granulated sugar (for sweet)(12.5g)
This recipe makes 6 to 8 crepes depending on the size. Cook at Medium to Medium Hi heat on your stovetop - 350 to 375 F.

Hello and welcome back to in the kitchen with Matt. I am your host Matt Taylor. Today I am going to show you how to make crepes, or the French pronunciation I believe is crepe. I had a request to make a video on crepes, so here we go. Crepes are really easy to do, if I can do it, you can do it. Let’s get started. First some people like to do this in a blender, so I have a blender here, but I am going to do this with a hand mixer, you can use a stand mixer if you want, or you can use a whisk. But uh, let’s first start off with 2 eggs, 1 and 1 half cups of milk, this is 2 percent milk, but you can use 1 percent, or whole milk, if you like, 1 tsp. of oil this is canola oil, or you can use vegetable oil. Also some people like to substitute the oil with butter, take like a tablespoon of butter and melt it, and put it in there. All right I am going to blend this together well. And now I am going to add 1 cup of all-purpose flour, and 1 fourth tsp. of salt. And that is the base batter for crepes. If you are going to make a sweet crepe what I like to do, is I like to add 1 tsp. of vanilla extract, and one tablespoon of granulated sugar. If you are making a savory crepe, leave out the vanilla extract, leave out the sugar, and add an extra half tsp. of salt. Mix this together. There we go. Now if for some reason it is pretty lumpy and you can’t get the lumps out, you can throw this through a strainer. Now some people will chill this for about an hour in the refrigerator, I don’t do that, I don’t find it necessary, but you certainly can if you are having trouble with your batter. And now this batter is ready to go. All right I am going to turn the heat on the stove between medium and medium high. Now I just have an 8 inch non-stick skillet here, they do have a crepe skillet that you can buy, I will put a link down below if you want to get one of those, or they also have these little crepe making kits that you can get that are pretty cool, I will put a link down below in the description for those as well. Now once our pan is getting heated up, I am also going to take a little bit of butter, not a whole lot, and we will put it in the pan. I have ladle here and it holds about a quarter cup of batter, if you don’t have a ladle like this you can just use a quarter cup if you want, but this works really nicely.

Servings: 3 large crepes
2 oz cream cheese softened
2 eggs
3 tbsp almond flour
1/2 tsp Vanilla extract (or flavor)
1/2 tsp Cinnamon (optional)
1 tbsp Sweetener
Directions:
1. Add everything to a blender, and blend until smooth. You do not need to let the batter sit.
2. Take out a nonstick frying pan, and add butter to ensure that crepes do not stick.
3. On medium heat, add your batter onto your pan and swirl until your batter covers the entire pan.
4. Cook until golden brown and flip. Be careful to not rip your crepe! Use a large spatula! This is the one I used (
5. Flip and cook for an additional 2-3 minutes until brown and place on plate. Enjoy with any toppings you'd like!
Berry Compote Filling -
1/2 cup berries of choice (I used a frozen berry mix, but you can use
1 tbsp sweetener
Directions:
1. In a small saucepan on low heat, add your berries and sweetener.
2. Stir and let your berries cook and thicken up (stir occasionally).
3. Mash until the berries are chunky, and then just let your compote thicken!
Homemade Whipped Cream -
1/2 cup heavy cream
2 tbsp powdered sweetener
Directions:
1. Whip heavy cream and sweetener together until nice and fluffy!

Keto Crepes -
Porciones: 3 crepes grandes
2 oz de queso crema ablandado
2 huevos
3 cucharadas de harina de almendras
1/2 cucharadita de extracto de vainilla (o sabor)
1/2 cucharadita de canela (opcional)
1 cucharada de edulcorante
Direcciones:
1. Agregue todo a una licuadora y mezcle hasta que quede suave. No necesita dejar reposar la masa.
2. Saque una sartén antiadherente y agregue mantequilla para asegurarse de que los crepes no se peguen.
3. A fuego medio, agregue la masa a la sartén y gire hasta que la masa cubra toda la sartén.
4. Cocine hasta que estén doradas y voltee. ¡Tenga cuidado de no rasgar su crepe! ¡Usa una espátula grande!

1. ¡Batir la crema espesa y el edulcorante hasta que estén suaves y esponjosos!

Ingredients:
1 cup almond milk or milk of choice (240 ml)
2 eggs
3/4 cup all purpose gluten-free flour mix (180 ml)

Topping ideas:
Strawberries & raspberries
1 piece of 80% dark chocolate melted

1. Whisk all the ingredients together
2. Heat a lightly oiled pan over medium heat. Scoop the batter onto the pan with a ladle. Tilt the pan with a circular motion so that the batter coats the surface of the pan evenly
3. Cook for a few minutes on each side
4. Add your toppings and enjoy!
