Blueberry Muffins with only 8 ingredients

⭐️ Our vegan blueberry muffins are soft, light, moist, and packed with juicy blueberries. They are easy to make with only 8 simple ingredients; you can whip them up in 5 minutes.
⭐️ Ingredients
WET INGREDIENTS
1 teaspoon (3 grams) grated lemon zest
1 cup (240 grams) non-dairy milk any
¾ cup (150 grams) sugar
¼ cup (60 grams) neutral vegetable oil like avocado oil or canola oil
1 tablespoon (15 grams) vanilla extract
DRY INGREDIENTS
2 cups (300 grams) all-purpose flour
1 tablespoon (12 grams) baking powder
⅛ teaspoon salt
2 cups (300 grams) blueberries fresh or frozen
1½ tablespoon (12 grams) cornstarch

almond poppy seed muffins Something Vegan
RECIPE
1 3/4 cups all-purpose flour
3/4 cup organic sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup non-dairy milk
1/4 cup neutral oil
1 tsp. white vinegar
2 tsp. almond extract
1/2 cup sliced almonds
1 Tbsp. poppy seeds
Preheat the oven to 375 degrees Fahrenheit. To a bowl, add flour, sugar, baking powder, and salt. Stir well. Add non-dairy milk, oil, vinegar, and almond extract. Stir until smooth, but don't over-mix. Add most of the sliced almonds, and the poppy seeds, and stir in. Scoop the batter into a greased muffin pan. Sprinkle with the remaining almonds. Bake 18-20 minutes. Makes one dozen muffins.

15-MINUTE GLUTEN-FREE CHEESE AND VEGGIE MUFFINS
Transform simple vegetables into these amazing gluten-free cheese & veggie savory muffins! This idea is brilliant because not only you can use any type of veggie you have but also because you can mix and match depending on the season of the year and of course, make it gluten-free which is what we love!
GLUTEN-FREE CHEESE AND VEGGIE MUFFINS
INGREDIENTS:
1 tablespoon of olive oil
1 cup of chopped onions
1 large zucchini, chopped
1 cup of chopped carrots
1/2 cup of hard vegan cheese
about 1 cup of flour - any type of flour
Salt to taste
Black pepper to taste
1 1/2 teaspoon baking powder
1/2 cup of frozen spinach, squeezed and minced
1/4 cup water, veggie broth, or unsweetened vegan milk
METHOD:
Add the olive oil to a skillet and over medium heat, add the onions, when golden, add zucchini and salt, saute for 2 minutes, add the carrots, saute for about 2 minutes more, add the minced spinach, and black pepper, and sauté until golden brown and with absolutely no liquid in the bottom of the pan.
When ready, add the veggies to a bowl, and allow it to cool completely.
When the veggies have cooled completely, add any type of flour, salt, baking powder, then add water, veggie broth, or unsweetened vegan milk
Mix to incorporate, and adjust the amount of flour and water until the veggie batter reaches the desired consistency.
Grease a muffin tin, distribute the muffin batter into the tin, and bake it for 15 -20 minutes at 180C / 356F
CUPS CONVERSION:
1 cup = 250 ml / 8.45 oz
1/2 cup = 125 ml / 4.22 oz
1/3 cup = 85 ml / 2.87 oz
1/4 cup = 60 ml / 2.02 oz

Gluten free Pineapple Almond muffins
Hello Friends i baked Pineapples muffins using 100 % almond flour only. This time i used fresh pineapples, But there is no problem if you goin to use Pineapples in Can. It comes out delicious but the sponge looks cramble.
So i will suggest that if you are going to make this. Combined a gluten flour like rice , corn etc.
70 Gram almond flour
30 gram any gluten free flour you prefer.
In this video recipe we need Muffin case and pre heat your oven at 180*C ( 170*C if gas stove)
100 gram almond flour, 4 gram baking powder. 50 gram White lacanto ( or any 0 calorie sugar)
70 gram unsalted butter 2 eggs and 1/2 tsp of rhum or drop some vanilla essence.

Ingredients :
1. Vegetable Oil 2 tbsp
2. Plain Curd/ Yogurt 1/2 cup
3. Milk / Almond Milk 1/4 cup
4. Vanilla Essence 1 tsp
5. Lemon juice 1 tbsp
6. Castor Sugar/Brown Sugar 1/2 cup
7. Almond Flour 1 cup
8. Wheat flour 1/2 cup
9. Baking Soda 1/2 tsp
10. Baking Powder 1 tsp
11. Salt 1/4 tsp
12. Chocolate Chips 1/4 cup
Method :
1. Mix all the ingredients as shown in video.
2. Fill the batter in cupcake moulds & bake this in Preheated oven at 180°C for 20 to 25 minutes.
3. Let it cool completely at room temperature before serving.
