How To make Cardamon Almond Muffins
1 1/2 c Whole wheat pastry flour
1 1/2 ts Baking powder
1 ts Baking soda
1/2 ts Salt
1 ts Ground cardamon
3/4 c Soymilk
1/2 Cup
2 Tbsp pear puree (directions follow) 2 tsp lemon juice 1 tsp almond
extract 1 tsp vanilla 1 tsp artificial sugar substitute (or 2 Tbsp sucanat) 2 Tbsp cornstarch
Preheat oven to 375 degrees F. Coat 10 muffin wells with non-stick spray. Sift together flour, baking powder, baking soda, and salt. In a medium bowl, stir together remaining ingredients. The cornstarch will tend to stick together as a lump; make certain it is completely dissolved in the liquid. Pour dry ingredients in to wet and stir just long enough to mix completely. Spoon batter into the prepared muffin wells (the wells will be about half-full). Bake muffins for 25-30 minutes, until tops are lightly golden. Allow the muffins to rest a few minutes before removing to a cooling rack. Serve, or cool completely and store in an air-tight container up to two days. Pear puree: Puree is easily made by blending, until smooth, half of the fruit in a 15 oz. container of canned pears (packed in fruit juice is preferrable) . "Baby food" pureed pears are an even faster alternative. Note: If pears packed in juice are used, 1/4 cup of the juice can be substituted for 1/4 of the soymilk and the sweetener omitted. Mango, Pistachio and Cardamon Muffins | Vegan, Gluten-free and No Added Sugar Recipe
I hope you enjoy making these muffins! Here's the recipe written-out so it's easier to follow. :)
Ingredients:
100 g olive oil
1 x 435 g tin mango puree
5 tsp apple cider vinegar
2 tsp vanilla extract
A pinch of salt
1 tsp turmeric
310 g ground almonds
225 g gluten-free flour (I used Dove's Farm's gluten-free brown bread flour)
3 heaped tsp baking powder (ensure gluten-free if necessary)
1/2 tsp bicarbonate of soda (baking soda)
2 tsp ground cardamom
1 tsp cinnamon
85 g chopped pistachios (+ optional extra for topping)
Method:
- Pre-heat the oven to 180°C (350°F).
-In a bowl, mix together the olive oil, mango puree, apple cider vinegar, vanilla extract, salt, turmeric and ground almonds.
-Fold in the gluten-free flour, baking powder, bicarbonate of soda, cardamon and cinnamon until it is just mixed but don't over-mix.
-Fold in the chopped pistachios.
-Line 2 cupcake trays with 20 cupcake cases in total.
-Divide the mixture between the cases.
-Optional: sprinkle the extra pistachios over the un-baked muffins.
-Bake in the oven for 20 minutes or until a skewer comes out clean.
-Leave to cool before serving. Best eaten fresh but can also be enjoyed the next day.
Notes:
These muffins are less sweet than a typical muffin. If you'd rather have a sweeter muffin, feel free to add a sweetener such as agave syrup to the recipe.

2.1tsp cinnamon powder

5.handful of chocolate chips
6.2cups jaggery powder
7.1cup almond flour

Preheat oven @350
