Ingredients
3/4 cups heavy cream (180ml)
1/4 cup powdered sugar (35g)
1/2 teaspoon vanilla extract
1/2 cup sour cream (120g)
11 oz can mandarin oranges, well drained (312g)
10 oz ¾ cup maraschino cherries (without stems)
1 8 oz can pineapple tidbits, well-drained
1 1/2 cups sweetened shredded coconut (120g)
4 cups mini marshmallows¹ (200g)
Instructions
00:00 Introduction
00:50 Combine heavy cream, powdered sugar, and vanilla extract in a large bowl. Use an electric mixer to beat until mixture is thick, billowy, and the consistency of Cool Whip.
01:44 Stir in sour cream.
02:05 In a separate bowl, stir together oranges, cherries, pineapple, coconut, and mini marshmallows.
03:01 Add whipped cream/sour cream mixture and stir until completely combined.
03:25 Cover bowl and chill in refrigerator for at least 1 hour before serving.
Notes
¹I like to use the rainbow/fruit flavored mini marshmallows for more of a tropical flavor, but classic white mini marshmallows work just as well!

How to make Ambrosia :
I made this for about 12 people so obviously adjust depending on numbers!
In a large bowl, combine:
1 litre of cream, beaten to stiff peaks
750ml of vanilla yoghurt (can be any kind of yoghurt, a lot of people use berry flavour)
Then anything you want that you think would be yummy! Some people use coconut but I put in:
Approx 6 large meringues, roughly broken up
About 20 marshmallows, chopped into pieces
Mixture of blackberries and raspberries - I used most of a 1L container of berries we grew on our land, but any fruit is fine!
3 Flake chocolate bars, crumbled
Fold all the ingredients together until combined and put some more ingredients on the top to make it pretty!
