How To make Apple Butter Streusel Muffins
Vegetable cooking spray -- optional 1 1/2 c All-purpose flour
1/2 c Wheat germ
1/2 c Firmly packed brown sugar
2 1/2 ts Baking powder
1/2 ts Salt, optional
1/2 c Apple butter
3/4 c Skim milk
3 tb Margarine; melted
2 Egg whites; slightly beaten
StrEUSEL TOPPING:
1/8 ts Ground cinnamon
3 tb Wheat germ
2 tb Firmly packed brown sugar
1 tb All-purpose flour
1 tb Margarine; melted
Preheat oven to 400 F. Line 30 mini-muffin pan cups or 12 medium muffin cups with paper liners, or spray bottoms only wtih cooking spray. In medium bowl, combine flour, wheat germ, brown sugar, baking powder and salt; mix well. In small bowl, combine apple butter, milk, margarine and egg whites until well blended. Add to flour mixture, stirring just until dry ingredients are moistened. Fill muffin cups almost full with batter. Prepare streusel topping (see below); sprinkle evenly over batter, patting gently. Bake mini-muffins 12 to 15 minutes, and larger muffins 20 to 22 minutes, or until wooden toothpick inserted in center comes out clean. Serve warm. StrEUSEL TOPPING: in small bowl, combine all ingredients; mix until well blended. Notes: To freeze, wrap muffins securely in foil or place in freezer bag. Seal, label and freeze. To reheat muffins, unwrap; microwave on High (100% power) about 30 seconds per muffin. Per Serving (1 mini-muffin): About 75 cal, 5 g pro, 13 g car, 2 g fat, 24% cal from fat, 0 mg chol, 65 mg sod. Today I made apple crumble muffins, which making festive house smell.
It has been almost a month since I uploaded the baking video.
I only added ground cinnamon for spice, but it will be also great with adding apple pie spices :)
This recipe has so much apples in it. But after bakes, there are no crunch texture, so you won't know this recipe is with apples unless you already know.
Fyi, not crunch is not meaning it’s squishy????

????Ingredients(12 muffins)
+Apple Muffin
240g(2cups) all-purpose flour
4g(1tsp) baking powder
3g(1/2tsp) baking soda
4g(1/2tsp) salt
4g(1tsp) ground cinnamon
113g(1/2 cup) unsalted butter
67g(1/3 cup) white sugar
110g(1/2 cup) brown sugar
2 eggs
5g(1tsp) vanilla extract
220g(1cup, 7.7oz) chopped apples
240g(1cup, 8oz) shredded apples
+Crumble
75g(1/3cup) brown sugar
15g(1Tbsp) all-purpose flour
pinch of ground cinnamon
15g(1Tbsp) unsalted butter
1. Preheat oven to 375F / 190C.
2. Mix white sugar and chopped apples.
3. In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in chopped apples mixture and shredded apples. Mix with sifted flour, baking powder, ground cinnamon, baking soda and salt.
5. In a small bowl, mix unsalted butter, brown sugar, flour and cinnamon. Rub until mixture is like coarse crumbs or wet sand.
6. Scoop the mixture into the prepared muffin pan and sprinkle over tops of mixture in muffin pan.
6. Bake 20~25 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.
