APPLESAUCE CAKE
This classic applesauce cake is a favorite old-fashioned dessert from my Southern grandma. Sugar, spices, cinnamon applesauce, raisins, and walnuts are baked into a rich and moist irresistible treat.

INGREDIENTS
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
½ teaspoon nutmeg
½ teaspoon cloves
½ cup butter softened
1 cup sugar
½ cup brown sugar
2 eggs room temperature
1 teaspoon vanilla
2 cups cinnamon applesauce
½ cup milk
1 cup raisins
1 cup walnuts chopped
INSTRUCTIONS
Preheat oven to 350 degrees.
In a small bowl pour the milk and place the raisins in the milk. Let them sit while preparing the rest of the cake.
Prepare a 9x13 pan by lining the bottom with parchment paper and spray with nonstick spray.
In a medium-size bowl whisk together the flour, baking powder, baking soda, cinnamon, salt, nutmeg, and cloves. Set aside.
In a large bowl beat together butter and sugars until mixed.
Add the eggs and vanilla and beat until mixed together.
Add the dry ingredients slowly to the butter/sugar mixture and beat just until combined.
Add the applesauce and mix on low just until combined.
Add the raisins and milk mixture and walnuts and mix until just combined.
Bake for 30-35 minutes or until a cake tester in the middle of the cake comes out clean.
Once the cake has cooled frost with cinnamon cream cheese frosting.
CINNAMON CREAM CHEESE FROSTING Ingredients 8 ounces cream cheese ½ cup butter, softened 3 cups powdered sugar 2 tablespoons heavy cream 1 teaspoon vanilla ½ teaspoon cinnamon ¼ teaspoon salt How to Make Frosting In a large bowl beat together the cream cheese and butter until smooth. Add the powdered sugar and beat on low until powdered sugar is mostly mixed in. Add cream, vanilla, cinnamon and salt and mix on medium speed until all smooth and creamy.

INGREDIENTS
FOR THE APPLESAUCE CAKE
- 1/2 cup butter, room temperature
- 1 cup sugar
- 1/2 cup dark brown sugar
- 2 eggs
- 1 1/2 cups applesauce
- 2 cups flour
- 1/4 teaspoon baking powder
- 1 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 teaspoon salt
FOR THE CARAMEL FROSTING
- 1/2 cup butter
- 1 cup dark brown sugar
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 2 cups sifted powdered sugar
- 3/4 cup walnuts, toasted and chopped

INSTRUCTIONS
FOR THE APPLESAUCE CAKE
Preheat oven to 350 degrees.
Grease a 9×9 cake pan with nonstick spray. Line with parchment and spray again. Then set aside.
In the bowl of an electric mixer, cream the butter and sugar until light and fluffy, 3 minutes.
Add the eggs one at a time, mixing in between each until incorporated.
Mix in applesauce. The batter will seem very loose and curdled, but that is completely normal.
Add the flour, baking powder, baking soda, cinnamon, cloves, nutmeg and salt. Mix until just combined, 2 minutes.
Remove bowl from mixture and use a spatula to scrape the bottom of bowl, ensuring the batter was mixed evenly.
Pour into prepared pan and bake until a toothpick or skewer inserted into the middle comes out clean, about 35-45 minutes. While the cake is cooling, make the frosting.
FOR THE FROSTING
In a 4 quart saucepan, combine the butter, brown sugar and milk. Melt on medium low heat, stirring occasionally. Continue to cook until the mixture begins to boil and boil lightly for 2 minutes. Remove from heat and cool for 10-15 minutes.
Add vanilla and sugar. Whisk until smooth and thick.
Once the cake is completely cool, frost the cake. Sprinkle with toasted walnuts in desired.
NOTES
To maintain freshness, this cake freezes well in an airtight container up to one month.

Old Fashioned Buttermilk Applesauce Cake
Y'all this is one of my all time favorite cakes. It is so simple to bring together and you probably have all the ingredients in your pantry and this cake needs no frosting at all. I grew up with this cake and it always brings me back to my aunt Carols kitchen each time I smell it baking and then again when I take my first bite. I love to use chunky applesauce in mine because finding those little chunks of apple just throw it over the top for me. Y'all, please let me know what you think about this version and y'all enjoy.

Ingredients:
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ginger
1/2 teaspoon ground cloves
1/2 cup butter, at room temperature
1 cup granulated white sugar
1/2 cup brown sugar
2 large eggs, room temperature
1 teaspoon vanilla
2 cups apple sauce
1/2 cup buttermilk
In a medium bowl bring together the dry ingredients (flour, baking powder & soda, salt and spices)
In the bowl of your stand mixer cream the sugars and butter till incorporated and sugar dissolved.
Add in the eggs one at a time and mix to combine.
Now incorporate the vanilla, applesauce and buttermilk. Stir 1-2 minutes to incorporate well.
Now in batches add the dry mixture to the wet mixture. Be sure to mix well between additions.
Pour batter into a prepared 9x13 baking dish and spread evenly
Bake in a preheated 350°F oven for 30-35 minutes
You can dust with powdered sugar if you like.
