Polish Christmas Cookies - Kolaczki Swiateczne - Recipe #124
Kolaczki are delicate pastry filled with different kind of filling. I am preparing my Christmas version filled with plum butter and poppy seed feeling!

Ingredients:
230 g, 1 cup of butter, 2 sticks - room temperature
250 g of cream cheese - room temperature
2 cups all purpose flour
1 /2 teaspoon salt
1/3 cup of poppy filling
1/3 cup of plum butter
icing sugar for rolling and serving
Instructions:
In a large mixing bowl, cream together the butter and cream cheese. Mix until smooth.
Mix flour and salt together.
Gradually add in the flour, sifting, beat until a soft dough forms.
Separate dough into 4 balls and wrap each in saran wrap. Refrigerate for 24 hrs.
Preheat your oven to 180 degrees C or 350 degrees F.
Roll out the dough on a surface lightly dusted with powdered sugar until about 1/4-inch thick. Work in small batches, keeping the rest of dough in the fridge. If the dough gets too sticky as you are working with it, place it back in the fridge.
Cut the dough into more or less 6 cm or two-inch squares.
Place about a teaspoon of the plum butter or poppy seed filling in the center of each dough square. Bring two opposite corners of the dough together over the filling to form a roll. Pinch the corners together. You can also place a tsp of filling on a corner of a square and roll it up like a crescent roll.
Place the cookies on ungreased cookie sheets.
Bake for 10 to 12 minutes or until lightly browned. Dust with powdered sugar while warm.
Allow to cool completely on a wire rack.

1 teaspoon vanilla bean paste

Apricot Jam Filled Sandwich Cookies
These sandwich cookies are buttery, crumbly, melt-in-your-mouth goodness! You can also customize your filling, spread on one cookie and sandwich away!

Ingredients:
1/2 cup (1 stick) unsalted butter, softened to room temperature
1/2 cup powdered sugar, sifted
2 large egg yolks, at room temperature
1/2 teaspoon pure vanilla extract
1 & 3/4 cups all-purpose flour
1 teaspoon cornstarch
1/4 teaspoon salt
1/4 cup apricot jam
Instructions:
In a large bowl, cream together your butter and sugar together until smooth and the sugar is fully dissolved. Add in your egg yolks and vanilla extract. Whisk to combine everything together.
Add your flour, cornstarch, and salt to the butter / egg mixture. Mix until you get a crumbly dough that holds its shape when squeezed together. Transfer the cookie dough to a large piece of plastic wrap. Press the dough down and shape into a disk. Wrap the dough and refrigerate for about 1 hour, or until it firms up. You can also place the dough in the freezer for 30 minutes to make it quicker.
Preheat your oven to 350°F. Line 2 large baking sheets with parchment paper, and set aside.
Take the dough out of the fridge, unwrap, and place on a lightly floured work surface. Roll the dough out to a 1/4 inch thick. Use a lightly floured, 2 inch round cookie cutter to cut out your cookie shapes. Use a smaller cookie cutter (about 3/4 inch) to cut holes in the center of half of your cookies for the sandwich tops.
Arrange the cut cookies on your baking sheets, leaving about 1 inch of distance between each cookie. Repeat the rolling and cutting process with the remaining dough. Bake your cookies in the center of your preheated 350°F oven for 10 to 12 minutes, or until just slightly golden around the edges.
Let the cookies cool for about 5 minutes on your baking sheet. Transfer the cookies to a wire rack to cool completely to room temperature before sandwiching. Spread around 1 teaspoon of your jam on one of your cookies that don't have a hole in the center. Top your jam with one of the cookies with a center cutout. Gently press to push the jam to the edges. Repeat with the remaining cookies until they're all sandwiched.
(Optional) Top your cookies with a dusting of powdered sugar before serving.

1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine salt
3/4 cup unsalted butter (1 1/2 sticks), softened
2/3 cup sugar, plus more for rolling
1 large egg
1/2 teaspoon pure vanilla extract
1/2 teaspoon almond extract
1/3 cup raspberry, cherry or strawberry jam or any jam you like
1 cup finally chopped pecans
Directions
Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone mats.
Whisk the flour, baking powder and salt together in a bowl.
In another bowl, whip the butter and the sugar with a hand-held mixer or stand mixer until fluffy, about 5 minutes. Beat in the egg and vanilla and almond extract until just combined. Slowly beat in the dry ingredients. Don’t over mix. Scoop the dough into 1-inch balls with a cookie scoop or spoon and roll in pecans. Place about 2-inches apart on the prepared baking sheets. Press a thumbprint into the center of each ball, about 1/2-inch deep. Fill each indentation with about 3/4 teaspoon jam.
Bake cookies until the edges are golden, about 15-18 minutes. Turn cookie sheets halfway through baking. Cool cookies on the baking sheets.

JAM FILLED POCKET COOKIES | ONLY 4 Ingredients | Jam Filled Turnovers ❤️ Marmeladni Žepki
Episode 41: These Jam Filled Pocket Cookies are called Marmeladni žepki in Slovenian. They are one of my favourite cookies and my children just looooove them too.
They can be filled with any of your favourite jams — your own delicious homemade fruit jam would just bring them to a whole new level. Our family favourite, is with my moms homemade plum jam!
These cookies are perfect ANY time of the year and the best thing about them is they are made with only 4 ingredients!!
Print recipe:
Recipe:
1 x cup of butter (room temperature)
1 x 8oz block of cream cheese
1 x egg yolk (**reserve egg white for later use)
1 1/2 cups of flour
* Bowl of sugar to roll the cookies in as soon as they come out of the oven!
Directions:
• mix all ingredients by hand ( * add more flour in very small amounts as needed)
• place in fridge for 1 1/2 hours or overnight
• roll out dough
• cut out small round circles
• place about 1/4 tsp of jam in the middle
• brush on reserved egg white ** Helpful tip — by brushing on the egg white around the seam it will help to seal the edges. Then you will press down firmly with your finger tips and seal the ends firmly. The egg whites help ensure that your cookies stay sealed during the baking process -- some cookies may leak jam BUT thats ok they taste just the same.
• Bake in a 325 degree oven for about 20-25 minutes
• As soon as you remove them from the oven toss them gently in a bowl of sugar!
