4 Cod fillets (1 1/4 lb)
1 Onion,medium-size,chopped
2 Garlic cloves,finely chopped
2 tb Olive oil
28 oz Tomatoes,drained/chopped
1 tb Capers
1/4 c Basil,fresh,chopped
8 Black Greek olives,pitted
1 tb Lemon juice
1 t Oregano,dried leaf,crumbled
1/2 ts Salt (opt)
1/4 ts Pepper
1. Preheat oven to 450'F. Arrange fillets in 8x8x2"
square baking dish. 2. Saute onion and garlic in oil in medium-size
skillet over medium heat 3-5 minutes or until lightly softened. Add tomatoes, capers, basil, olives, lemon juice, oregano, salt if using, and pepper. Simmer, stirring occasionally, 8 minutes. Spoon sauce over fish. 3. Bake in preheated 450'F. oven for 10 minutes or
until cooked through.

Oven baked cod with Ritz cracker topping with lemon, butter and parsley is a delicious fish recipe that you can put together in about 20 minutes! Join Eric from Simply Elegant Home Cooking as he demonstrates this New England classic. It is very important to buy the highest quality fish you can find, and be sure you get wild caught fish. The cod can be substituted for other white fish such as halibut or haddock. Also, be sure to use Ritz crackers, which have a delicious buttery flavor and consistency. Other types of crackers will not taste as good!
Ingredients:
-2 pieces of thick cut wild caught cod or other white fish
-2 tablespoons butter
-1 small pack of Ritz crackers (approximately 14 crackers)
-1/2 lemon, cut into slices
-1 large handful of chopped Italian parsley
-Salt and pepper to taste
Directions:
-Remove the cod from the fridge 30 minutes before you plan to cook. Pat it dry with a paper towel.
-Crush the Ritz crackers into large crumbs. This can be done either in their packaging or by placing into a freezer bag and using either your hands or a rolling pin. Be sure not to crush too much. You want large crumbs, not a fine powder.
-In a small skillet, melt the butter over a low heat. Once butter is melted, turn off the heat and add the crushed Ritz crackers, along with the parsley, salt, and pepper.
-In either another skillet or sheet pan, melt a small amount of butter to prevent sticking. While the butter melts, season the cod with salt and black pepper.
-Place the cod into the buttered skillet or sheet pan, and spoon over the Ritz cracker and butter mixture. Do not worry if some of it falls off on the sides.
-Place the skillet into a preheated 375 degree F oven, and cook for about 18-20 minutes or until desired doneness.
-Serve and enjoy with the sliced lemon!

Sicilian-Style (Italian) Baked Cod Fish make a bold flavorful base so that even those funny about fish will love it. this baked cod recipe packs big flavor using sweet-tart tomatoes, briny olives and salty capers. that mixture gets baked ahead of time so, when it’s time to dine, simply nestle mild white fish filets—use as many filets as mouths you’re feeding—into the base then bake until just cooked through.
1 ½kg -------Fillet of Cod Fish
10 ml -------Extra Virgin Olive Oil
650ml -------Tomato Sauce (from the Can )
200ml ------- White Wine
8-10 -----------Fresh Sage
8-10 ----------Cherry Tomatoes

BETH'S COD PROVENCAL RECIPE
Serves 1
INGREDIENTS:
2 tsp (10 ML) coconut oil (or any other cooking oil you prefer)
salt and pepper to taste
1 tsp (5 ml) Herbs de Provence
2 Roma tomatoes, diced
4 pitted kalamata olives, roughly chopped
1 tbsp (15 ml) capers
1/4 cup (60 ml) white wine OR 1 tbsp (30 ml) fresh lemon juice and 1 tbsp (30 ml) water
1 tbsp (30 ml) fresh flat leaf parsley, chopped
1 6 oz (170 g) piece of white cod
1 tsp (5 ml) olive oil
a pinch of fleur de sel sea slat
METHOD:
Melt oil on a medium-high flame, in a non-stick pan, until hot. Meanwhile, pat dry and season 1 side of fish with salt, pepper and herbs de provence. Place seasoned side down in a pan and sear until golden brown about 4-5 minutes.
Then flip the fish and turn the flame off. Allow to sit in hot pan 3-4 mins more until cooked through.
For sauce: melt oil in a pan, add tomatoes and salt and pepper to taste. Once they start to break down, add wine, then add olives and capers and reduce until thickened. Add fresh parsley.
Pour sauce out onto a plate, creating a bed. Place cooked fish on top, drizzle fish with olive oil, Fleur de sel sea salt and fresh parsley.
