How To make Baked Pea Beans
2 pounds white beans
navy pea beans
1 onion :
studded with
2 cloves
1 bay leaf
1 tablespoon salt
1 pound salt pork -- lean
1 pound smoked ham
3 onions
3 garlic cloves
2 teaspoons mustard powder
1/4 cup rum
^^ SOAK washed and sorted beans overnight. ^^ Drain and add fresh water to come 3 inches above the beans. Add the onion stuck with cloves, bay leaf, and salt, and bring to a boil. Boil rapidly for 5 minutes. Skim the top, reduce the heat and simmer until the beans are tender but not mushy. ^^ Meanwhile, put the salt pork in water and bring to a boil. Lower the heat and simmer for 25 minutes. Remove the pork from the water and cut it first into slices, then into small pieces. Cut the ham into strips. ^^ Peel and chop the onions and garlic cloves. Blend the mustard with a little bean liquid. Taste the beans for seasoning. Place a layer of the beans in the bottom of a large baking dish. Add a layer of salt pork, ham, onion, and garlic. Repeat the layers ending with beans on top. Pour the mustard water over the mixture, and add enough bean liquid to come to the top of the baking dish. Bake in preheated moderate oven (350F) for 90 mins. !! Keep the beans moist while baking; add more bean liquid or water. ^^ After 90 mins. remove and pour the run over the beans. Return to oven and bake another 45 minutes, or until nicely browned and bubbly. Reheat at picnic on camp stove or serve cold. (c) 1966 by Woman's Day Encyclopedia of Cookery. NY: Fawcett, Inc. Healthy Baked Koose/Akara (West African Black-Eyed Pea Cake)
Koose/Akara is a traditionally deep-fried West African breakfast food made with black-eyed peas (beans), chillis and other spices. We added a healthier twist to this breakfast food by baking instead. We hope you enjoy this recipe!
Ingredients for 8-10 muffins:
350g raw black-eyed peas
1 red onion
2 spring onions
1 or 2 scotch bonnet/red chillis
Salt to taste
Tiny splash of water for blending
Coconut or other oil
(Flour just in case you add too much water and the mixture is thin)
You will also need a muffin tray!

Today I'm making vegan baked beans in the Instant pot! RECIPE BELOW

INSTANT POT-
LUX 6 QT
Mesh Strainer-
INGREDIENTS:
1 lb small white beans
5 cups water
2 bay leaves
1 onion diced
4 cloves garlic minced
1 cup tomato sauce
1/2 cup maple syrup,
2 tbsp molasses
2 tbsp apple cider vinegar
2 tbsp liquid aminos
1 cup water
1/8 tsp black pepper
1 tbsp yellow mustard (not pictured in video)
pinch salt (optional)
To the inner pot add 1 lb dry beans, 2 bay leaves and 5 cups water. Cook on high pressure for 25 minutes. When 25 minutes is up do a 20 minute natural release. Drain beans and set aside.
Clean inner pot and put it back inside instant pot. Set IP to saute mode. Saute onions and garlic for 5 minutes until soft. Add in tomato sauce, maple syrup, molasses, liquid aminos, vinegar, pepper, mustard, 1 cup water and the cooked white beans. Cook on high pressure for 25 minutes. When finished do a 20 minute natural release.

add 1/4 tsp salt if you are used to eating high salt foods and want the extra flavor
add smoked paprika or liquid smoke for smoky flavor
add 1 tbsp yellow mustard (I ran out for the video)
