EAT | Applesauce Bread as Easy as Pie
If you're looking to mix it up from your usual banana bread, this crumb-topped applesauce bread is amazing. It's full of flavor and couldn't be easier to make. Plus, there are some sneaky, healthy ingredients.
INGREDIENTS:
- 1/2 cup softened butter
- 2/3 cup sugar
- 1/4 cup light brown sugar
- 2 large eggs
- 1/4 cup greek yogurt
- 1 cup applesauce (unsweetened or cinnamon)
- 2 teaspoons vanilla extract
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 1 cup flour
- 3/4 cup almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- pinch salt
DIRECTIONS:
1. Preheat oven to 350. Butter a 9-by-5-inch loaf pan.
2. In a large bowl, mix together butter, sugar, brown sugar, eggs, greek yogurt and applesauce.
3. Add the vanilla, flour, baking soda, baking powder and mix until just combined.
4. Pour batter into prepared pan. Top with crumbs. Bake for 45-60 minutes or until tester comes out clean.
--- CRUMBS---
Put 1/4 cup + 2 tbsp flour, 1/4 cup + 2 tbsp oats, 1/3 cup brown sugar, 1/2 tsp cinnamon and a pinch of salt in food processor. Turn on and add 4 tablespoons butter a bit at a time until it resembles crumbs.

BANANA BREAD RECIPE HEALTHY (GF)
BEST BANANA BREAD RECIPE (HEALTHY, GLUTEN FREE & OIL FREE)
INGREDIENTS:
3 BANANAS (ripe & mashed)
1/4 CUP APPLE SAUCE
1/2 CUP VANILLA COCONUT MILK (I used so delicious unsweetened, but you can use any plant based milk you'd like; however, I have found coconut milk (refridgerrated not canned) gives it a nicer and more moist texture)
1 TSP APPLE CIDER VINEGAR
1/3-1/2 CUP COCONUT SUGAR (I like coconut sugar because it's less refined, has a lower GI, and it also gives the bread a nice almost caramel like flavor, but feel free to use cane or brown)
1 CUP OAT FLOUR
1 CUP BROWN RICE FLOUR
1/2 TBSP BAKING POWDER
1/2 TSP BAKING SODA
1/2-1 TSP CINNAMON
OPTIONAL: 1 TSP VANILLA (if not using vanilla flavored milk)
DIRECTIONS:
1. Preheat oven to 375F. In a big bowl mash up the bananas.
2. Add in the apple sauce, milk, apple cider vinegar and coconut sugar. Mix well.
3. Add in the remaining dry ingredients and mix it well till the batter is fully incorporated.
4. Pour batter into a prepared baking dish (optional: add a banana on top).
5. Bake for 60-70 minutes (check on it at around 40-45 minutes, if it looks golden take it out and cover it with aluminum foil so the top doesn't burn as it finishes cooking).
6. When the timer goes off insert a toothpick or butter knife and check if it comes out clean and the bread doesn't feel mushy or wet (if it needs more time, keep it covered and place it bake in for another 5-10 minutes). The cooking time will depend more on your oven and the size of your pan (mine is pretty small so it fills up high which means it takes longer to cook all the way through, if you have a bigger pan it will most likely cook faster), so be sure to keep an eye on it (my oven and pan takes 70 minutes).
7. Once bread is done take it out and let it cool for at least 20 minutes before slicing (you can slice it before 20 minutes, however, I find you get a cleaner cut and the texture is better once it's cooled off for at least 20-30 minutes.
8. Slice it up and enjoy!
I love to serve my banana bread with sliced banana, cinnamon sprinkled on top, and a glass of vanilla coconut milk (my mom likes her's plain with a cup of coffee), but feel free to add peanut butter, jelly, etc or just enjoy it plain :)
