How To make Banana Bread French Toast
1/2 cup egg substitutes
(about 2 eggs
beaten) 8 slices Hazelnut Banana Bread :
(see Index)
OR your favorite banana bread Vegetable spray
Makes 4 servings
I discovered this fabulous brunch idea at the Villa Banfi dining room of the Statler Hotel at Cornell University, my alma mater. Here is my version.
In a shallow mixing bowl, pour the egg substitutes or eggs. Heat a lightly sprayed nonstick skillet over medium heat. Take a slice of banana bread and dredge both sides in the egg mixture. Place onto the heated skillet and cook both sides until golden brown. Transfer to warm plates and repeat with the remaining slices of bread.
If you'd like, serve with Nutmeg Applesauce (see Index).

Banana French Toast Bake
Serves 8-10
INGREDIENTS
Banana-Brown Sugar Glaze
½ cup butter
¾ cup brown sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
5 bananas, sliced
Custard
8 eggs
¾ cup brown sugar
1 teaspoon cinnamon
¼ teaspoon nutmeg
2 teaspoons vanilla extract
1 cup heavy cream
1 cup milk
1 loaf French bread, cut into 1-inch cubes
Garnish
Powdered sugar
PREPARATION
1. Preheat oven to 350˚F/180˚C.
2. Over medium-high heat, melt butter and stir together brown sugar, cinnamon, and vanilla. Bring to a simmer and add the sliced bananas.
3. In a large bowl, whisk 8 eggs, brown sugar, cinnamon, nutmeg, vanilla, heavy cream, and milk. Add the cubes of French bread, and gently stir until the bread has soaked up all the liquid.
4. Pour the bread into a greased 9x13 inch baking dish. Top with the banana and sugar glaze.
5. Bake for 45-50 minutes until golden brown and slightly crispy around the edges and top. (Times & temperatures may vary based on oven).
6. Serve with powdered sugar on top.
7. Enjoy!

Banana Bread French Toast with Michael's Home Cooking
This will put you into a Diabetic Coma, it is so very good! I use Banana Bread to make French Toast. I also make a great Butterscotch Banana Sauce to top off this excellent breakfast meal.
Ingredients:
SAUCE:
3 ounces of butter (6 Tablespoons)
3/4 cup packed brown sugar
2 Tablespoons Corn Syrup
2/3 cup heavy whipping cream
2 or 3 bananas cut up
Optional:
2 or 3 ounces of booze
dash of cinnamon
bacon
EGG WASH:
2 eggs
1/4 cup milk
1 teaspoon sugar
1/4 teaspoon cinnamon
1/4 teaspoon salt or a good dash of salt
1 and 1/2 teaspoons vanilla extract
Store bought Banana Bread or make your own, and use the leftover.
METHOD:
I like to make the sauce first so that it is ready for the Banana Bread French Toast as it comes out hot from the pan.
Mix all your sauce ingredients.
Cook until smooth and creamy texture.
Set aside and keep warm while you cook your French Toast.
Mix up your egg mixture until well mixed.
Dip your bread into the egg mixture about 2 minutes or so per side.
Melt 2 Tablespoons butter in pan, then cook your Banana Bread French Toast until browned on each side.
Serve immediately with your warmed sauce.

Banana Bread French Toast - French Toast Recipe --The Frugal Chef
This banana bread French toast is spectacular. It is great for brunches and a delectable treat all in all. We are going to lightly spice the egg batter so that it enhances the already wonderful flavors of the bread. Serve this with powdered sugar or maple syrup. Delish!

Makes 2 pieces
2 slices of banana bread
2 eggs
A splash of cream or milk
½ tsp. vanilla extract
A pinch of ground cloves
A pinch of cinnamon
1 tsp. butter
Maple syrup
Whisk the eggs, cream, vanilla, cloves and cinnamon in a bowl.
Heat a skillet or griddle and add the butter. Spread to coat the bottom.
Place the banana bread – a slice at a time – and coat both sides well. Do not soak the bread. Shake off the excess egg and place the bread on the skillet.
Brown the bottom and flip. Brown the other side and remove from heat. Cut the French toast at the diagonal and arrange on a plate. Serve with powdered sugar or maple syrup. Enjoy!
