How To make Banana Bread French Toast
1/2 cup egg substitutes
(about 2 eggs
beaten) 8 slices Hazelnut Banana Bread :
(see Index)
OR your favorite banana bread Vegetable spray
Makes 4 servings
I discovered this fabulous brunch idea at the Villa Banfi dining room of the Statler Hotel at Cornell University, my alma mater. Here is my version.
In a shallow mixing bowl, pour the egg substitutes or eggs. Heat a lightly sprayed nonstick skillet over medium heat. Take a slice of banana bread and dredge both sides in the egg mixture. Place onto the heated skillet and cook both sides until golden brown. Transfer to warm plates and repeat with the remaining slices of bread.
If you'd like, serve with Nutmeg Applesauce (see Index).

Banana Bread French Toast
The ultimate banana breakfast flavor bomb! Banana Bread French Toast. I don't know what possessed me to try this, but after trying I found that others had the same idea! I completely understand why. For sweet breakfast lovers, this dish is the holy grail of all breakfast recipes.
I have always used a little liquor in my french toast. Normally I put some amaretto, but for this recipe I think dark rum works great. I used Zacapa Centenario from Guatemala. After further testing of this recipe I also found that lightly salting the top of the bread before adding the syrup adds a magnificent sweet/salty flavor.
Here are the ingredients you'll need to make your Banana Bread French Toast:
1 egg
2 oz. dark rum
1 teaspoon of cinnamon, and extra for dusting
1/4 cup of milk
2 Tablespoons of sugar
Butter to grease the pan
Salt to taste
Whisk all the ingredients together with a fork. Place the mixture in a pan or plate deep enough to soak the entire slice of banana bread.
Place each slice of the banana bread in the mixture and allow it to soak well. Place a pat of butter in the frying pan on medium high heat. Allow the butter to melt. Place each piece of Banana Bread in to the pan and cook for 4 minutes on each side. Be sure to lightly dust one side with cinnamon.
Remove from the pan and serve with your favorite flavor of syrup!

Banana Bread French Toast with Michael's Home Cooking
This will put you into a Diabetic Coma, it is so very good! I use Banana Bread to make French Toast. I also make a great Butterscotch Banana Sauce to top off this excellent breakfast meal.
Ingredients:
SAUCE:
3 ounces of butter (6 Tablespoons)
3/4 cup packed brown sugar
2 Tablespoons Corn Syrup
2/3 cup heavy whipping cream
2 or 3 bananas cut up
Optional:
2 or 3 ounces of booze
dash of cinnamon
bacon
EGG WASH:
2 eggs
1/4 cup milk
1 teaspoon sugar
1/4 teaspoon cinnamon
1/4 teaspoon salt or a good dash of salt
1 and 1/2 teaspoons vanilla extract
Store bought Banana Bread or make your own, and use the leftover.
METHOD:
I like to make the sauce first so that it is ready for the Banana Bread French Toast as it comes out hot from the pan.
Mix all your sauce ingredients.
Cook until smooth and creamy texture.
Set aside and keep warm while you cook your French Toast.
Mix up your egg mixture until well mixed.
Dip your bread into the egg mixture about 2 minutes or so per side.
Melt 2 Tablespoons butter in pan, then cook your Banana Bread French Toast until browned on each side.
Serve immediately with your warmed sauce.
