Tres Leches Cake with Berries

Yield: 9 to 12 servings
Ingredients
1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon kosher salt
3 extra-large eggs, at room temperature
1 cup plus 5 tablespoons granulated sugar
2 teaspoons pure vanilla extract
1/2 cup whole milk
1 1/4 cups heavy cream
1 (12-ounce) can evaporated milk
1 (14-ounce) can sweetened condensed milk
1/2 teaspoon pure almond extract
Seeds scraped from 1 vanilla bean
8 cups mixed fresh raspberries and sliced strawberries, for serving
Sifted confectioners' sugar, for dusting
Make-Ahead Whipped Cream (recipe follows)
Make-Ahead Whipped Cream:
1 1/2 cups cold heavy cream
1/4 cup confectioners' sugar
2 tablespoons granulated sugar
2 tablespoons creme fraiche
1 teaspoon pure vanilla extract
Directions
Preheat the oven to 350 degrees F. Butter a 9-by-13-by-2-inch baking pan.
Sift the flour, baking powder, and salt into a small bowl and set aside. Place the eggs, 1 cup of granulated sugar, and the vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium-high speed for 10 minutes (really!) until light yellow and fluffy. Reduce the speed to low and slowly add half the flour mixture, then the milk, and finally the remaining flour mixture. Mix with a rubber spatula to be sure the batter is well mixed. Pour the batter into the prepared pan, smooth the top, and bake for 25 minutes, until the cake springs back when touched lightly in the middle and a cake tester comes out clean. Set aside to cool in the pan for 30 minutes.
In a 4-cup liquid measuring cup, whisk together the heavy cream, evaporated milk, sweetened condensed milk, almond extract, and vanilla seeds. Using a bamboo skewer, poke holes all over the cooled cake and slowly pour the cream mixture over the cake, allowing it to be absorbed completely before continuing to pour on more of the mixture. Cover the cake with plastic wrap and refrigerate for at least 6 hours.
To serve, toss the fruit with the 5 tablespoons of granulated sugar. Dust the cake with confectioners' sugar, cut in squares, and place on dessert plates. Surround the cake with the fruit, put a dollop of Make-Ahead Whipped Cream on top, and serve.
Make-Ahead Whipped Cream:
Place the cream, confectioners' sugar, granulated sugar, creme fraiche, and vanilla in the bowl of an electric mixer fitted with the whisk attachment. Beat on high speed, until it forms soft peaks. Serve cold.

Easy Tres Leches Cake (Using a Cake Mix!)
We are making a very simple, easy version of Tres Leches cake. If you like very easy recipes and really moist cakes this one’s for you!
This is the first recipe I ever formulated and wrote down, over 10 years ago! It is the only cake recipe I’ve made more times than I can count! I get asked for this recipe more than any other thing that I make! I have yet to ever serve this cake to someone who didn’t love it and I’ve made it for birthdays, events, and even a wedding! You are definitely going to want to try this one!

My Coquito Tres Leches Recipe
Lisette’s Tres Leches Cake
One white cake mix prepared and baked according to box directions with eggs, oil, and water. Let cool and then poke holes all over cake with a straw.
1 can of condensed milk
1 can of evaporated milk
About 1 cup of regular or coconut milk
1 tsp vanilla
1/2 tsp imitation coconut extract (optional)
1 container of whipped topping (regular 8 oz. size)
Stir milks together (all together should measure to 4 cups). Mix in vanilla and coconut flavoring and pour mixture over cooled cake with holes poked. Top with cool whip. Refrigerate overnight or at least 4 hours. Enjoy!

* You can double the recipe (or 1.5 batches depending on the size) for a bigger pan.

• Egg yolk 68 g | 2.4 oz (about 4 large eggs)
• Salt 1/8 tsp
• Egg white 142 g | 5 oz (about 4 large eggs)
• Granulated sugar 142 g | 5 oz
• All-purpose flour 113 g | 4 oz
• Whole milk 85 g | 3 oz
???? 350F | 176C for about 25 minutes until the center bounces back gently
* Start checking from a bit earlier just in case.
* Adjust the time and temperature depending on the oven, the thickness of the batter, etc.
Milk Syrup
• Milk 750 g | 26.4 oz
• Heavy cream 50 g | 1.8 oz
• Granulated sugar 50 g | 1.8 oz
• Vanilla extract 1 tsp (or more as you like)
• Vanilla beans 1/2 pod
* Cook them down to 400 g | 14.1 oz (the amount after straining it in the end)
Or when you want to use condensed milk and evaporated milk, mix:
• Evaporated milk 250 g | 8.8 oz
• Condensed milk 100 g | 3.5 oz
• Heavy cream 50 g | 1.8 oz
• Vanilla extract 1 tsp (or more as you like)
• Vanilla beans 1/2 pod
Whipped cream topping
• Heavy cream 300 g | 10.6 oz
• Granulated sugar 17 g | 0.6 oz (about 4 tsp)
