How To make Barley Stuffed Peppers
4 md Pepper green
1 c Onion chopped
1 T Garlic clove minced
1/4 t Thyme, ground
1 c Barley, dry
8 oz Tomato Sauce, canned
1 oz Cheddar Cheese
cut top and stem off the peppers. clean out seeds and inside ribs. chop onion into course cubes. cook the barley per box instructions. pre-heat an oven to 350 degrees. bring water to a boil in a pot big enough to hold the four peppers. add peppers to boiling water for about 2 or 3 minutes or until crisp-tender (not soft). stir fry the onions, garlic, and spices over medium heat for about 7 minutes. grate the cheddar cheese. stir in the barley, grated cheddar cheese and tomato sauce and mix well then remove from heat. Place peppers in an 8 inch glass pie dish. fill peppers with mixture, cover them with foil and bake in the oven for 25 to 30 minutes

These barley stuffed peppers are a vegan and healthier version of the classic stuffed pepper recipe. This recipe includes a one-pot savory barley stew that's filled with amazing flavors, sweet and juicy colorful peppers and a simple creamy balsamic drizzle. Great family dinner everyone will love and very versatile.
Classic Stuffed Peppers Recipe ~ Noreen's Kitchen
Greetings! When I saw that peppers were on sale I decided that I would make some stuffed peppers for dinner. I have not made these in a good long time so they were a special treat!
This is also a great way to stretch your meal dollars. Make enough of the peppers and freeze some before you bake them, that way later in the month you will already have a casserole ready in the freezer. Just pop in a hot oven and bake for an hour and a half to two hours. Serve with a salad and some bread and dinner is done! A no brainer, for sure!

Stuffed peppers are always a family favorite. This classic version is loaded with ground beef, garlic, onion, tomatoes, spinach, and rice. They're easy, healthy, filling, and bonus - they make for delicious leftovers or meal prep.
When bell peppers are sliced in half they become the perfect vegetable to stuff with a variety of ingredients. They're firm enough to hold their shape while cooking, yet soft enough to enjoy sliced up with the filling, for a self-contained complete meal. Enjoy them for lunch or dinner!
