How To make Basic Black Beans
14 oz Dried black beans
2 qt Water
1/8 ts Baking soda
1/2 ts Ground oregano
2 ts Ground cumin
1 ea Green pepper, quartered
1/2 ea Onion, finely chopped
3 tb Minced garlic
1/4 c Olive oil
3 tb Cider vinegar
1/4 c Sherry wine
Salt, to taste Rinse beans and discard any stones. In a large pot, soak beans overnight in water with baking soda, oregano, cumin and green pepper. The next day, add onion, garlic, olive oil, cider vinegar, sherry and salt to the water and cook on medium-low heat for about 3 hours or until the beans are very tender and liquid is reduced and somewhat thickened. Make sure liquid in pot does not entirely boil away. To prevent beans from burning, add more water when necessary.

Cuban-Style Black Beans
12 oz pack of dry black beans
2-3 tbsp olive oil
1 yellow onion
1 green bell pepper
2 garlic cloves
1 tsp dried oregano
2 tbsp white distilled vinegar
1 tsp salt
1/2 tsp black pepper
1 tbsp sugar
1/2 tsp cumin
RESTAURANT STYLE DAL MAKHANI RECIPE USING BLACK BEANS
How To Make Dal Makhani Restaurant Style - Dal Makhani Recipe - Creamy Black Bean Curry
Dal Makhani is a very popular item in all menu cards of Indian restaurants. It is made using whole black Urad dal (lentils) but urad dal is only available at Indian grocery stores. I followed the same recipe using black beans which are readily available at grocery stores and was amazed by the results. It tastes equally good and saved my trip to the Indian grocery store. You can even use canned black beans.
Ingredients required for making dal makhani -
* 1 cup/220 gm/7.8 oz dry black beans soaked overnight with sufficient amount of water along with a tablespoon of salt. Please discard the water before cooking and rinse it again under fresh tap water..
* 1/4 th cup pinto beans (chitra rajma)
* add the beans to the pressure cooker along with Half a teaspoon of salt and a teaspoon of oil
* 2 large tomatoes
* 6 cloves of garlic + 3 cloves for frying with butter
* 2 inch length ginger
* 1 teaspoon oil
* 2 +2 tablespoons butter
* 1 teaspoon red chilli powder
* 1/2 teaspoon kasoori methi (dried fenugreek leaves)
* 1/2 cup heavy cream (save some for garnishing)
* 4 to 5 cups water
* can even add 1 teaspoon cumin seeds to oil before adding blended tomato puree to oil.
* 2 teaspoons sugar (optional)
* 1 teaspoon salt or as per taste
Serve this with naan/roti/paratha/rice.
