Beef Enchilada Casserole
Enchiladas without all the work – this Beef Enchilada Casserole recipe is family friendly and done in under 30 minutes! It’s the perfect dinner for when time is short but you still want a lot of flavor.

1 lb ground beef
1 teaspoon taco seasoning
1/4 teaspoon salt
1 10-oz can enchilada sauce
3/4 cup water
1/2 cup medium thick and chunky salsa
12 (6-inch) corn tortillas
1/4 cup fresh cilantro, chopped, divided
1 cup shredded Colby Jack cheese
sour cream and lime wedges, for serving
Preheat the oven to 350ºF.
Heat a large skillet over medium-high heat and add the ground beef, taco seasoning and salt. Cook, stirring and breaking up the beef, until the beef is browned and cooked through. Drain any fat, if needed.
Add the enchilada sauce, water and salsa and bring to a boil. Cook for 4-5 minutes, until slightly reduced. Remove from the heat.
Stack the tortillas and cut into 1-inch strips. Arrange half of the tortilla strips in the bottom of a 9-inch deep dish pie dish. Add half of the beef mixture, then sprinkle half of the cheese over the top. Sprinkle 2 tablespoons of the chopped cilantro on top. Repeat the layers, using the remaining tortillas, beef and then cheese.
Bake until the cheese is melted and bubbly, about 10 minutes. Sprinkle the remaining cilantro over the top before serving. Serve with sour cream and lime wedges.

⭐️ HOMEMADE ENCHILADA SAUCE Recipes

INGREDIENTS
2 cups (473 ml) enchilada sauce *see below*
1 lb (454 g) lean ground beef
1 packet of Taco Bell seasoning mix
3/4 cup (177 ml) water
1 1/2 cups cheese sauce *see below*
4 oz (227 g) shredded cheese of your choice
12 corn tortillas
2.3 qt baking dish
ENCHILADA CHILI GRAVY SAUCE
1/4 cup (59 ml) cooking oil
1/4 cup (35 g) all-purpose flour
2 Tbls (12 g) chili powder
1/4 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 Tbsp (10 g) chicken bouillon
2 cups (473 ml) water
**Makes at least 2 cups of sauce
CHEESE SAUCE
8 oz (227 g) Velveeta cheese
1/2 cup (123 g) sour cream
1/3 cup (77 ml) whole milk
1/4 tsp paprika
1/8 tsp onion powder

Homemade Baked Enchiladas
Homemade Enchilada sauce
Enchilada Pie
1 tbsp oil
1 pound ground turkey or beef
seasonings:
1 tbsp chili powder
1 tsp salt
1 tsp garlic powder
1 tsp minced dry onion
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp black pepper
1/4 cup water to meat if needed
10 oz can Las Palmas enchilada sauce
8 oz shredded cheese
9 corn tortillas
15 oz can refried beans
****add enchilada sauce in quarters****
Using a 9 inch cake pan, add 1/4 of the enchilada sauce to the bottom of the cake pan. Cut 2 corn tortillas in half. Arrange them as shown in the video, top with a 3rd tortilla. Add ground meat, add cheese on top of the meat. Add 1/4 of the enchilada sauce on top of the cheese and meat mixture. Top with 3 corn tortillas as before. Top with 1/4 enchilada sauce. Add refried beans. Top with 3 corn tortillas. Top with 1/4 sauce, top with cheese.
Bake in a 400 degree oven for 20 minutes.

Whit corn tortillas
Oil for frying
Medium cheddar cheese
For the beef chili gravy sauce
1/2 onion;small diced
2 minced garlic cloves
1 lb ground beef (80/20)
2 tsp ground cumin
2 tsp oregano
2 tsp black pepper
Salt to taste I used 1 1/2 tsp
3 1/2 unsalted beef broth
2 tbsp tomato paste
3 tbsp New Mexico chili powder
1 1/2 tsp paprika
1 1/2 tsp cayanne pepper
4 tbsp APF (all purpose flour)
