Stuffed Cabbage Soup
Ingredients 1 pound ground beef 1/2 cup chopped celery 1/2 cup chopped onion 1/2 cup chopped carrots 2 garlic cloves minced 3 to 4 cups chopped cabbage 1 tbsp olive oil 2 (14.5 oz.) cans diced tomatoes 1 (8 oz.) can tomato sauce 1/4 cup white rice 1 tsp dried thyme 1 tsp dried oregano 4 cups beef broth salt and pepper to taste
Instructions In a large soup pot cook celery, onions, carrots, and garlic in oil until onions are translucent. Add ground beef and cook until browned. Add the remaining ingredients and cook for 30 minutes or until cabbage and rice is tender.

Grandma's Favorite Beef & Cabbage Soup Ingredients: 2 pounds ground beef 1/2 onion, diced 2 cloves garlic, minced salt & pepper to taste 4 celery ribs, diced 1/2 a head of cabbage, chopped 1 can red kidney beans, light or dark, drained 1 15oz can diced tomatoes 1 15oz can tomato sauce 1/2 can tomato paste 3 cups water, or 2 cans of water using the tomato sauce can 1 tablespoon sugar, optional
Directions: Cook ground beef in a large pot with onion and garlic. When beef is done drain and then add all other ingredients. Bring to a simmer over medium heat, then reduce to low, cover leaving a little space to vent, and cook for at least 30 minutes. The longer it cooks the thicker it gets, so you may need to add more water. Serve with saltine crackers like Grandma did! Or any bread of your choice! ????????
