BEEF VEGETABLE SOUP
Yield: 16 cups Approximately
1 tablespoon olive oil
1 cup onions, diced
1 cup carrots, diced
1 cup celery, diced
1 pound ground sirloin
2 garlic cloves, minced
2 cup red potatoes, diced
2 cups vegetable broth, can substitute with beef or chicken broth,
and or water
1 (28-ounce) can tomatoes, diced
1 tablespoon kosher salt
2 teaspoons dried oregano
1/4 teaspoon fresh cracked black pepper
1 pinch to 1/4 teaspoon of crunched Red Pepper
2 cups of water (use more or less depending on soup thickness)
3/4 cup Edamame, cooked
3/4 cup corn, drained, may substitute with frozen corn
1. In a 5-quart Dutch Oven, or heavy bottom sauce pan, over medium-high heat, add the olive oil, onions, carrots, and celery. Cook 10 minutes, or until onion are slightly golden around the edges. Turn down heat to medium-low, if needed.
2. Add ground sirloin. Season the meat with 1/4 of the salt, ground oregano, and pepper. Crumble meat down while cooking until there is no pink color. About 6-7 minutes. DO NOT over cook the ground sirloin.
3. Add minced garlic. Cook for an additional 1 minute.
4. Add drained diced potatoes. Stir.
5. Stir in the vegetable broth, diced tomatoes, and water. Add the crushed red pepper, and the remaining salt, ground oregano, and pepper. Bring to a boil. Cook over medium-heat for 20 minutes. Stirring occasionally.
6. Add Edamame and corn. Stir. Bring to a boil. Reduce heat to simmer. Cover with tight-fitting lid. Cook an additional 30 minutes. Stirring every 5 minutes.
TIPS: Store in an airtight container in the refrigerator up to 4 days.

Niu (牛) is beef. Pahu (扒烀) means braised until tender in Yunnan dialect. This is a Yunnan-style braised beef soup. Yunnan is a special province, it has the largest number of ethnic minorities so there are lots of different cultures here. It borders Myanmar, Vietnam, and Laos; It is connected with Thailand and Cambodia through the Lancang Mekong River. With lots of catering collisions, Yunnan developed a complex, tropical, and interesting cuisine.

INGREDIENTS
To make the beef soup
2 kg of tough cuts of beef (beef honey cone trips, beef tendon, beef ribs, beef meat, beef bones)
2-3 liters of water
2 inches of ginger, sliced thinly
2 scallions, cut into stocks
1 cinnamon stick (Amazon Link -

To complete the soup
10-15 cloves of garlic, diced

2 shallot, diced
5-8 Thai bird-eye chili, diced
2 stalks of celery, diced
1/3 cups of diced mint leaves
5-6 culantro leaves, diced
5-6 cilantro leaves, diced
Lime juice from 2-3 limes, taste and adjust
2 tsp of Sichuan peppercorn powder (Amazon Link -

INSTRUCTIONS
Fill a big pot with water and add the beef. Bring it to a boil. Skim off the scum. Any tough beef cuts will work good for this recipe. Do your best to collect multiple cuts of beef so you can have different textures and flavors in one pot.
Put the following aromatics and spices into a spicy bag: ginger slices, scallion stalks, cinnamon stick, star anise, bay leaves, and white peppercorns.
Transfer the beef into a clean pot then add 2-3 liters of water. Add the spice bag. Bring it to a boil. Simmer on low heat for 1.5 hours.
Finely dice the garlic, ginger, scallion, shallot, celery, Thai bird-eye chili, mint, Culantro, and cilantro. Squeeze the juice from a few large-size limes. If you can not collect all these herbs, it is ok to use other kinds of herbs you like.
Remove all the beef from the pot and leave the broth behind. Discard the bones and the spice bag. Cut the beef into bite-size pieces.
Put the beef meat back into the clay pot. Bring it to a boil again. Add all the herbs along with the Sichuan peppercorn powder and salt to taste.
Add the lime juice gradually and taste to adjust the flavor.

Vegetable Beef Soup
2 lbs Chuck Steak - cubed in 1 inch chunks
1 lb Mushrooms - sliced
3 Lg Yellow Onions - chopped
4 Carrots - diced
3 Celery Ribs -chopped
1 C String Beans - cut in 2 pieces
2 Cans Petite Diced Tomatoes
2-3 Large Russett Potatoes - diced
4 Cloves Garlic - minced
2 Tbsp Tomato Paste
2 Tbsp Soy Sauce
1/2 C Red Wine
48 oz Beef Stock or Broth
1 Tbsp Beef Base
4 Tbsp Vegetable Oil - divided
1 tsp Thyme
3 Bay Leaves
Salt & Pepper - to taste
Place meat in a bowl and add soy sauce. Marinate while you prepare all the vegetables.
Heat 1 Tbsp oil in pot, add sliced mushrooms, season with salt & pepper, cook until liquid evaporates, remove from pot and set aside. Heat another Tbsp oil and add onions, cook until they start
to turn brownn, remove and set aside.
In same pot add 1 Tbsp oil, brown meat. Best to do in 2 batches not to crowd the pan, adding the other Tbsp oil with the 2nd batch of meat. When done add the 1st batch back to the pot. Add tomato paste and stir adding in red wine, & beef base. Cook for a few minutes stirring occasionally. Add mushrooms & onions and stir in garlic, thyme & beef base, mix well.
Add celery, onions, string beans, potatoes & diced tomatoes, stir. Add in the beef stock* and stir, add 3 bay leaves cover, simmer
for 2 - 2 1/2 hours or until vegetables are soft.
*I made my own stock from the bones of a left over rib roast. Just put the bones in a pot and cover with water, simmering for about an hour to an hour and a half. Strain the stock and pick any meat off the bones to add to the soup.
