✅ if you don’t want to make a filling try them with just pickled jalapeños and cheese this is how my mom makes them any they are absolutely delicious
Ingredients: makes 35-40 tamales
For the salsa
6 roasted roma tomatoes
Chile serranos i used 4
3 garlic cloves
1 roasted Chile pobalno(optional) **i forgot to add it in video
1/4 tsp ground cumin
1 tsp salt
1 tsp black pepper
Filling
12 roasted, peeled and chopped poblano peppers
1 whole onion
Garlic salt to taste
For the masa
6 cups instant corn masa for tamales
12 oz lard or shortening
5 tsp baking powder
2 tsp salt
1 cup pickle jalapeño juice
6 cups chicken broth
2-3 lbs blend of queso Oaxaca, Monterey Jack and mozzarella

This dish is super delicious and can be eaten in countless different ways-add it on top of tostadas, as burritos, alone with a fork, as a taco, added to quesadillas, on top of sopes, and so many other ways! It’s just as good the day of, as it is days after and reheated. We eat this dish for breakfast, lunch, or dinner, so it’s super flexible and works for all meals perfectly!!
Disclaimer: I’m used to handling peppers without hand protection, but wear gloves if you desire. Also, if you’re not feeding a big crowd and don’t care for many leftovers, cut recipe in half and use a small size pan.
Ingredients:
*7-8 poblano peppers
*4 jalapeño-1 per 2 poblano peppers if desire some heat, but not requires to be added
*2 tomatoes or 1 per 3-4 poblano peppers
*1/4 of large onion-you can use less if not a big fan of onion, but trust me the onion cooks so well you don’t have a strong taste of it
*Lawry’s seasoned salt or regular salt (watch video for amount, a lot will depend on the peppers and your like. This can be made with less salt than I used and still taste delicious!)
*Oil-enough to cover the bottom of your pan lightly
*3 eggs-I use 1 egg per 2-3 poblano peppers, if you’re not a big fan of them you can use 2 for this recipe, but again it is so delicious mixed with all these ingredients
*Cheese-I prefer queso fresco but you can also use white shredded cheese. And again, use as much or as little as you’d like! Watch the video for tips on how much my recipe calls for

I grew up watching and helping my mom make delicious CHILES RELLENOS, and this was one dish I avoided even though I loved it. The process of roasting then removing the seeds and veins from the POBLANO peppers was a struggle and it is the one job my mom had me do. Once I got older and started making my own, I was on a mission to find a better and easier way of preparing the peppers for chiles RELLENOS without the struggle. This is my technique, I hope it helps you as it has helped me.❤

Rajas Con Crema (with Vegan Option)
Rajas con crema is a classic Mexican dish made with fire roasted poblano peppers sliced into strips then cooked with onion, corn and Mexican crema.
Some people also like to mix in cheese for an extra decadent dish.
Ingredients
4 fire roasted poblano peppers, peeled, seeded and sliced into strips
1 small white onion, halved and sliced
3 cloves of garlic, minced
1/2 teaspoon sea salt
1/2 cup corn (fresh, frozen or canned)
3/4 cup Mexican crema or crème fraiche or vegan crema
2 Tablespoons olive oil
To make this recipe vegan simple swap the dairy crema and use a plant-based sour cream. I have a recipe for the crema, you can find it ????

3/4 cup (130 g) fresh corn kernels
1 small onion
1 clove of garlic
2 Tbsp (28 g) unsalted butter
1 tsp chicken bouillon powder
8 oz (227 g) sour cream
4 fl oz (118 ml) heavy cream
4 oz (227 g) Oaxaca cheese
salt and pepper to taste
