How To make Big Oatmeal Cookies with Dates and Nuts
3/4 c Butter
3/4 c Brown sugar
1/2 c Granulated sugar
2 Eggs
1/4 c Milk
1 ts Almond extract
2 c Flour
1 ts Cinnamon
1 ts Allspice
1/2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
2 1/2 c Rolled oats; not instant
1 c Dates; cut in 1/4" dice
1 c Walnuts; coarsely broken
1/4 c Sweetened shredded coconut
1/4 c Sesame seeds
Cover a flat baking sheet w/parchment if possible; tinfoil if necessary. If you use tinfoil, butter it generously. Preheat oven to 375. Cream the butter with the sugars until light and fluffy; the sugar needn't be completely dissolved but it should be very well mixed in. Beat the eggs w/milk and almond extract until the mixture is foamy. Sift the flour w/spices, baking powder, baking soda, and salt. Make sure all the embellishments are ready. Using a wooden spoon, work about half the flour mixture into the butter and sugar. Add the milk and egg mixture and combine well. Then add the rest of the flour mixture and, as soon as the dough is smooth, the oats, dates, nuts, coconut, and sesame seeds. Give each addition about 2 stirs before adding the next, but don't wait until each is well mixed. Stir only enough to ensure proper distribution of the goodies at the end. Put golf ball-sized dollops of the dough on the lined baking sheet, spacing them about 8" apart. Use a knife blade to flatten and spread the dough into 3.1/2" circles (which will spread a bit in the oven). Be sure they aren't more than 1/4" thick. Bake the cookies 8 mins., then reverse the sheet so they brown evenly and lower the heat to 350~. Bake another 5 to 8 mins. or until the cookies are nicely browned and a broken one is dry in the center. They will be soft when they come out of the oven, but will become chewy, w/crisp edges, as they cool. Cool on a wire rack. Source: Yankee New England Cookbook by Leslie Land -----

Today, I will be sharing with you how to make banana cookies. It's one of my children's favorite snacks. The recipe for these cookies is very simple, without using baking powder, baking soda, sugar, oil & flour, The COOKIES are very healthy and delicious!
1cup=250ml 1/4cup=60ml
Two ripe bananas
The weight of the peeled banana is about 170 grams
Put the bananas in a large bowl and mash them with a fork
Add in 1 cup of quick oats
1/4 cup dried cranberries, chopped
Add dried and chopped cranberries
Mix well
Prepare a large baking pan and line it with parchment paper or a silicone baking mat
Dig a tbsp and put it on the baking tray
This recipe can make 12 small biscuits
Use the back of a spoon to gently press to form a small round shape with a diameter of about 6 cm
Put it in the preheated oven and bake at 175 degrees Celsius or 350 degrees Fahrenheit for 15 minutes
The taste of this biscuit is slightly chewy on the outside and very soft on the inside
This is a very healthy and simple recipe
My kids absolutely love this cookie!

Ingredients
1 cup unsalted butter softened (226g)
1 cup light brown sugar tightly packed (200g)
1/2 cup granulated sugar (100g)
2 large eggs room temperature preferred
1 1/2 teaspoon vanilla extract
1 3/4 cup all-purpose flour (215g)
2 teaspoon cornstarch (cornflour in UK)
1 teaspoon baking soda
3/4 teaspoon salt
3/4 teaspoon ground cinnamon
3 cups old-fashioned rolled oats (285g)
1 1/2 cups chocolate chips, chopped nuts, or raisins optional
Instructions
00:00 Introduction
00:10 Beat butter in the bowl of a stand mixer (or using an electric beater) for about 30 seconds. Add sugars and beat until light and fluffy (pause to scrape down sides and bottom of bowl, if needed).
00:52 Add eggs, one at a time, beating until combined. Stir in vanilla extract.
01:16 In a separate bowl, whisk together flour, cornstarch, baking soda, salt, and cinnamon.
01:59 Gradually add flour mixture to butter mixture until completely combined. Be sure to scrape the sides and bottom of the bowl so ingredients are well-mixed.
02:37 Gradually stir in oats until completely combined. If using raisins or chocolate chips, stir them in at this point.
Chill dough in refrigerator for 30 minutes.
03:18 Preheat oven to 375F (190C) and prepare cookie sheets by lining with parchment paper. Drop cookie by rounded 2-3 Tablespoon-sized ball onto parchment paper, spacing at least 2” apart. Bake on 375F (190C) for 10-12 minutes (edges should be slightly browned, centers may still be slightly underbred but shouldn’t be raw, they’ll bake completely as they cool).
Allow cookies to cool completely on cookie sheet before serving and enjoying.

Wet Ingredients:
73 g | ⅓ cup neutral-tasting oil
100 g | ½ cup brown sugar
24 g | 2 Tbsp granulated sugar
45 g | 3 Tbsp non-dairy milk
½ tsp vanilla extract
Dry Ingredients:
