How To make Biscotti Di Pignoli
2/3 c Pine nuts
1/2 c Butter
3/4 c Sugar
2 Eggs
2 tb Lemon juice
2 tb Lemon zest
2 c Plus 2 Tbs unbleached or
-all-purpose flour, 1 1/2 ts Baking powder
1/4 ts Salt
Place nuts in a shallow pan and bake in a 180C/350F oven for 6 to 8 minutes or until golden brown. Let cool. In a mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs, lemon juice and zest. In a bowl, combine the flour, baking powder and salt. Add to the creamed mixture, mixing until blended. Fold in nuts. Divide dough in half. On a greased and floured baking sheet pat out into two logs about 1/2 inch high, 1.5 inches wide and 14 inches long, spacing them at least 2 inches apart. Bake in the middle of a 170C/325F oven for 25 minutes or until lightly
browned. Transfer from the baking sheet to a rack. Let cool for 5 minutes. Place on a cutting board. With a serrated knife slice diagonally at a 45 degree angle about 1/2 inch thick. Lay the slices flat on the baking sheet and return to the oven for 10 minutes longer, turning them over once, to dry slightly. Let cool on a rack. Store in a tightly covered container. These cookies keep well. Makes about 3.5 to 4 dozen.

Delicious Pignoli Cookies (Biscotti ai Pinoli) made with ground almonds, egg whites, and crunchy pine nuts. These cookies are soft and chewy on the inside with a crispy and crunchy outside, so delicious and easy to whip up using a food processor!
Ingredients
2 cups ground almonds (200g)
½ cup granulated sugar (100g)
½ cup powdered sugar (icing sugar UK) (65g) plus extra for dusting
3 large egg whites
1 tsp almond extract
Zest of 1 lemon
1 pinch of salt
½ cup pine nuts (50g)
Instructions
Preheat the oven to 350F (180C) and line a baking tray with baking parchment.
Put the ground almonds (2 cups/200g), granulated sugar (½ cup/100g), powdered sugar (½ cup/65g) and a pinch of salt in a food processor and pulse a few times until just combined.
Add the egg whites (3 large), lemon zest and almond extract (1 tsp) and blitz everything together until thoroughly combined.
Put the pine nuts (½ cup/50g) into a clean bowl. Using wet hands roll the dough into 1 tbsp balls around 1.5 inch in size. Drop each ball into the bowl of pine nuts so one side is completely covered then place on the baking tray.
Bake in the oven for 25-30 minutes until slightly golden around the edges. Let them cool completely then dust in extra powdered sugar.

Pignoli Cookies Recipe
makes about 3 dozen
Ingredients:
10 oz almond paste
½ cup sugar
4 large egg whites, divided
1 cup confectioners’ sugar
2 cups pine nuts
Directions:
1. Beat the almond paste and sugar in a bowl until combined.
2. Beat two egg whites into the almond mixture.
3. Gradually add the confectioners’ sugar to the almond mixture and mix thoroughly to make dough.
4. Whisk the remaining two egg whites in a separate bowl until the egg whites are foamy.
5. Dip your fingers into the flour to keep the dough from sticking to your fingers. Shape the dough into 1-in. balls, dip the balls into the egg whites, and coat each ball in the pine nuts.
6. Place the balls on two parchment paper-lined Air Flow Racks and flatten each ball slightly.
7. Place the Racks on the bottom and middle shelves of the PowerXL Air Fryer Oven.
8. Press the Power Button, decrease the cooking temperature to 325° F, and increase the cooking time to 18 mins. Rotate the Racks halfway through the cooking time (9 mins.).

Recipe:
all-purpose flower
8-ounce almond paste
1/2 white sugar
1/2 cup confectioners' sugar
4 egg whites divide two and two
1/2 cup pine nuts
cooking spray
Directions:
preheat the oven to 325 degrees
take 2 cookie sheet and put parchment paper and spray it with nonstick.
put the almond paste in the food processor add the sugar and blend together. add the 2 egg whites blend in then add the 1l2 cup of confectioner's sugar blend it all well then done.
now have flour in a bowl the two other egg whites and pine nuts ready.
put flower on fingers on both hands make about a 1 inch ball of the mix
dip in the egg white and then dip into the pine nuts and place on tray.
repeat process until you done them all.
place them in the oven for 15 to 18 minutes
take them out let them sit for 30 minutes
you can add on top confectioner sugar if you like.
