How To make Black Bean Stuffed Peppers
1 c Dried black beans
4 Bell peppers
1 tb Olive oil
1 c Onions; chopped
1 tb Chili powder
1 ts Ground cumin
1 ts Dried basil
1/2 ts Dried oregano
1 tb Wine vinegar
2 1/2 c Brown rice; cooked
pn Sea salt 1 md Tomato; chopped
Prepare beans according to package directions. Cut peppers in half lengthwise and remove seeds. Steam peppers, cut side down, over 1/2" boiling water until nearly tender, about 8 to 10minutes. Rinse with cold water, drain and set aside. Preheat oven to 350 deg. Heat oil in a skillet over mediumheat.Saute onion until soft and translucent. Add chili powder, cumin, basil, oregano, beans and vinegar; mixing well. Stir in rice, salt and tomato. Remove from heat. Fill peppers with bean mixture. Place in a shallow baking dish. Bake, covered, until peppers are tender, about 15 minutes. Serve immediately. Per serving: 233 cal; 13 g prot; 303 mg sod; 30 g carb; 7 g fat; 0mg chol; 34 mg calcium

Ingredients:
6 bell peppers
2 cups of brown rice (cooked)...1 cup of dry rice
Baby bella mushrooms
1/2 yellow onion
1/2 cup of chopped bell peppers
Shredded cheese (of your choice...I used cheddar and monterey jack)
14.5 oz can of diced tomatoes
15 oz can of tomato sauce
1 cup of spinach
Olive oil
3 cloves of garlic
Onion powder
Garlic powder
Garlic pepper
No-Salt Seasoning
Smoked paprika
Parsley flakes
Preheat oven to 350 degrees. Pre-bake the bell peppers for about 15 minutes. You could also boil them for a few minutes on the stove. Make your filling. Stuff the peppers with your desired ingredients. Bake in oven for about 20-25 minutes.

Hello awesome people, thanks for checking out this recipe! As I said it’s healthy, delicious and great for you. You can also switch up the fillings if you want, some ground beef would work well for meat lovers. It’s an easy tasty family style recipe for lunch or dinner.
Recipe:
3 peppers, cut in half and seeds/stem discarded
1 cup ready made quinoa or cook to package instructions
1 red onion, chopped
2 garlic cloves chopped
1 tsp smoked paprika
1 tsp ground cumin
1 can black beans, drained
1 chopped tomato or 2-3 tbsp canned
Avocado/olive oil to drizzle
Salt and pepper to season
To garnish : pine nuts, feta cheese and parsley
Preheat oven to 200c/400 F
Drain your black beans.
Firstly, halve your peppers and take the seeds and stem out.
Drizzle with oil and and seasons salt and pepper and place in the oven for 6-8 minutes.
Place a saucepan in the hob with a little oil on a medium heat. Add in the chopped garlic and onions. Stir frequently.
Next add the black beans and chopped tomatoes, finally stir through your quinoa cook well for 5 minutes.
Take out peppers and set aside. Stuff the peppers generously with the quinoa mixture and garnish with pine nuts and whichever cheese you fancy.
Place back in the oven for 10 minutes or until the pepper is tender but still holding shape. Scatter over chopped parsley or coriander and dig in!

Quinoa Stuffed Bell Peppers | vegetarian & great for meal prep
These veggie-packed bell peppers are stuffed with a quinoa and black bean filling and are perfect for meal prep! They freeze well and make great leftovers.
Ingredients
▢6-8 large bell peppers
▢1 tablespoon olive oil
▢1 medium red onion
▢¼ teaspoon salt
▢1 small jalapeno (optional)
▢1 cup dry quinoa rinsed
▢2 teaspoons cumin
▢1 teaspoon chili powder
▢1 teaspoon smoked paprika (optional)
▢½ teaspoon garlic powder
▢½ teaspoon onion powder
▢2 cups vegetable broth
▢15 ounce can fire-roasted tomatoes
▢15 ounce can of black beans drained and rinsed
▢1 cup frozen sweet corn

3 large bell peppers, tri colored
1/2 green and red bell pepper, diced
1 small yellow onion, diced
2 tsp jerk seasoning
2 tsp all purpose seasoning
1 tsp smoked paprika
1 Tbsp brown sugar
Juice of 1 lime
1 tsp jalapeño pepper paste or 1 jalapeño, diced
1 tsp garlic paste or 1/2 tsp minced ginger
1 Tbsp garlic paste or 4 cloves minced garlic
1 Tbsp tomato paste
1/4 cup water
1 cup yellow rice
1 can black beans, rinsed and drained
1 cup shredded mozzarella cheese
Fresh chopped cilantro for garnish
Jerk Aioli
1/2 cup mayo
1 tsp jerk paste
Juice half lemon or lime
1/2 tsp mustard
2 Tbsp sweet chili
