How To make Black Beans & Rice (Genie)
Ingredients 16 oz (1) pkg dried black beans;
1 md Size green pepper; chopped
1/4 c Onion; divided chopped
2 1/2 c Qts water; divided
2 cl Garlic; minced
1/2 ts Dried whole oregano;
1/4 ts Ground cumin;
3 tb Vinegar;
1 ts Salt;
3 c Rice; cooked hot
-cooked without salt/fat Sort and wash beans. Combine beans, green pepper, and 2 tb onion in a large Dutch Oven. Cover with 6 cups of water, and soak overnight. Add remaining 4 cups water to Dutch oven; cover and bring to a boil. Reduce heat, and simmer 2 1/2 hrs or until beans are tender. Combine remaining 2 tb onion, garlic, oregano, and cumin in a small bowl; mash mixture, using a fork. Stir in vinegar. Add vinegar mixture and salt to beans. Simmer, uncovered, an additional 20 minutes. Serve over hot cooked rice. Authentic Punjabi Rajma Recipe | Punjabi Style Rajma | Chef Sanjyot Keer
Written recipe for Authentic Punjabi rajma
Rest time: 6 hours
Prep time: 15 mins
Cooking time: 1 hour
Serves: 6-8
Ingredients:
• Rajma (kidney beans) 1 cup
• Water as required
• Salt to taste
• Onions 3-4 medium size (sliced)
• Oil 50 ml (4 tbsp)
• Ginger garlic paste 2 tbsp
• Tomato puree of 4-5 medium size
• salt to taste
• turmeric powder 1/4th tsp
• coriander powder 1 tbsp
• Red chilli powder 1 tbsp
• Garam masala 1 tsp
• Kasuri methi 1 tsp
• Fresh coriander 2 tbsp (chopped)
Methods:
• Rinse the rajma with water thoroughly. And soak it in fresh water for 5-6 hours or overnight. After soaking, drain the excess water and keep aside for cooking.
• Set a cooker on medium heat, and add the soaked rajma, add water and fill up to 2 inches above the rajma surface, add salt and pressure cook on medium heat for 3 whistles. Switch off the flame and let the cooker depressurize naturally to open the lid.
• Set a deep pan or wok on medium heat, add oil and onions, cook until the onions are brown, keep stirring while cooking the onions.
• Remove the fried onions on absorbent paper and cool down to room temperature.
• Transfer the fried onions to a grinding jar and grind to a fine paste, use water as required.
• Set the same pan and reuse the oil that was used earlier for frying onions, add ginger garlic paste and sauté for few minutes.
• Add tomato puree, salt to taste, stir well, cover and cook for 5-6 minutes, while stirring in intervals.
• Add turmeric powder, coriander powder and red chilli powder, mix well and add the onion paste and cook well for about 15-20 minutes and while stirring in intervals.
• Add the precooked rajma along with its water, mix well and cook well for 15-20 minutes.
• Add salt to taste, garam masala, kasuri methi and freshly chopped coriander leaves, stir and mix well. You can add hot water if required and adjust the consistency of the gravy depending on how thick or thin you want it to be.
• Your authentic Punjabi rajma is ready to be served, serve hot with steaming hot rice and some paratha or roti as per your preference.

This is how i cook rice.
The amount of water depends on the type of rice. Try out a couple times to find the best for your type of rice.
- The water to white rice (short grain) ratio i usually cook is 1,2: 1 ( for example 120gram of water to 100gram of rice).
- 1,4:1 for white long grain
- Brown rice needs more water (1,6: 1).
+++ Before cooking i usually soak the rice in cold water for 20-30 mins so it cook more evenly, without this step you should put add a bit more water.
Note: I use the tempered glass bowl, that oven safe and up to 300°C. Do not use a normal glass.
There is also a white rice bowl belong to this steamer but i didn't use in this video.

I’m using 4 -48 oz jars Great Northern beans
If you use the can get 6- or more cans depending on how many you want to feed
Smoked turkey wings or Legs
Ham Hock (Optional )
Ham (optional)
1 onion
1 Red bell pepper
1 Green Bell pepper
1 Garlic Clove
Salt pepper garlic powder onion powder
Red pepper Flakes (pinch sugar optional)
Chicken powder
1 or 2 32 oz chicken broth depending on how much beans your making
Water
I will be making jiffy corn bread you’ll need that and the ingredients to make it or pre made corn bread
Rice I use boil in a bag rice takes 11 minutes to cook
