Ingredients:
10 red potatoes, small
8 slices bacon
1 small red onion, chopped
4 celery ribs, chopped
2 tbsp unsalted butter
2 tbsp all-purpose flour
½ tsp dry mustard
1 tbsp granulated sugar
1 cup beer
½ tsp Tabasco sauce
salt and ground black pepper, to taste
For Garnish:
2 tbsp parsley, chopped

0:09 Slice and boil the potatoes until tender, drain and set aside.
0:20 In a medium-sized pot. Fry bacon until crisp. Drain well, chop bacon and mix with onion, celery, and salt and pepper and set aside.
0:38 Stir butter and flour in a small saucepan to make a roux. Add mustard and sugar. Slowly stir in beer and Tabasco sauce. Bring to boil, stirring constantly.

Tasty Meatballs with Potato Salad Recipe | Cook It Like A German Ep. 5
Every country probably has its own take on the recipe for meatballs, and Germany has one too. Called ‘Frikadellen’, ‘Buletten’ or ‘Fleischpfllanzerl’ depending which part of the country they’re from, they pair marvelously with another German favorite: Potato salad. DW Food chef Felicitas Then and her Chilean guest Franco Loos show us how they’re made, in a new episode of Cook It Like A German.

Meatballs with Potato Salad Recipe
Ingredients for 4 servings, Prep and Cook time: approx. 1h
For the Potato Salad
600 g Potatoes, primarily waxy
Salt
Caraway seeds
2 bay leaves
1 small onion
100 ml Vegetable stock
1 tsp. hot mustard
1 tsp. sugar
1 - 2 tbsp. white wine vinegar
4 tbsp. neutral oil
Black pepper, freshly ground
6 radishes
6 Cornichons
1 bowl garden cress
Wash the potatoes and bring water to a boil. Add salt, the caraway seeds and bay leaves and boil until tender, 20-25 min. Drain the potatoes and allow to cool for a little bit. Once the potatoes are just cool enough to handle, peel and cut them into slices. Finely dice the onion. Then add to the warm vegetable stock, add mustard, sugar, vinegar and oil and mix with the potatoes. Season with salt and pepper and let it sit at room temperature. Then, thinly slice the radishes and cornichons, and add to the potatoes with the garden cress.
For the Buletten (German Meatballs)
1 bread roll
200 ml milk
1 onion
1 tsp. butter
2 tsp. hot mustard
2 tbsp. parsley, finely chopped
Chili powder
Nutmeg, freshly grated
Salt
Black pepper, freshly ground
400 g ground meat (mixed)
1 Egg
3 tbsp. breadcrumbs
5 tbsp. oil
First, soak the bread roll in milk. Finely dice the onion and sauté in 1 tsp. butter. Mix the ground meat with the onions, mustard, parsley, chili, nutmeg, and season with salt and pepper. Take the soaked roll and squeeze in your hands to remove most of the liquid. Then add to the bowl with the ground beef, alongside egg. Next, use your hands to shape little meat balls from the mixture, then coat with breadcrumbs.
Heat oil in a pan and fry the meat balls on both sides until they are crispy and cooked through. Pat the meatballs with paper towels to get rid of any excess oil and serve with potato salad.

A relative from my Mann asked me one day if I like German food. She especially emphasised her love for potato salad. People even put this potato salad to their ordinary veggie salad, add it to their schnitzels as the side dish or just eat as a light lunch.

Recipe
Place in large bowl:
4 Russet Potatoes cooked and sliced
• cook with skins on then peel when cool
• slice about ¼ inch thickness, too thin and the slices will fall apart
½ small onion thinly sliced
• Cut rings in half or smaller
• Use more or less onion to taste
½ can black olives sliced (optional)
1 part vinegar (approx. ¼ cup)
2 parts oil (approx. ½ cup)
Season to taste:
2-3 pinches of dried basil
1-2 pinches dried oregano
Salt and pepper

Quick and Easy Japanese Potato Salad
A classic, home-cooked dish for over one hundred years, Japanese Potato Salad is distinct because of its colorful addition of fresh vegetables, creamy texture, and rounded flavor. It's the ultimate crowd-pleaser!

INGREDIENTS
2 russet potatoes (1.15 lb, 520 g)
2 tsp kosher/sea salt (I use Diamond Crystal; use half for table salt) (for cooking the potatoes)
¼ cup frozen or canned corn (1.4 oz, 40 g)
1 large egg (50 g w/o shell)
1 Persian cucumber (or ½ Japanese cucumber; 92 g, 3.25 oz)
2 inches carrot (2 oz, 60 g)
1 tsp kosher/sea salt (I use Diamond Crystal; use half for table salt) (divided; for cucumber and carrot)
2 slices black forest ham (1.9 oz, 54 g)
For Seasoning
1 Tbsp rice vinegar (If you don't have rice vinegar, I'd skip and do not use other vinegar as they tend to be too strong)
freshly ground black pepper (to taste)
6 Tbsp Japanese mayonnaise (I recommend with 4 Tbsp first, then add more if needed)
