How To make Black Olives with Tomatoes and Capers Over Pasta
1 tb Olive oil
3 md Garlic cloves, chopped fine
1 sm Onion, coarsely chopped (3oz
1 cn Salt-free whole tomatoes
- (16-ounce) 1 c Pitted black olives, medium,
-drained and broken up 3 tb Capers, drained & rinsed
1 tb Balsamic or good quality
-red wine vinegar 1 tb Double-concentrate tomato
-paste 2 ts Sugar
1/2 ts Dried oregano
Cooked pasta of your choice In a large skillet or saucepan, heat the olive oil with the garlic and onion over moderate heat. When they sizzle, add the tomatoes, breaking them up with your hands. Then stir in the remaining ingredients. Simmer the sauce until it is thick but still slightly liquid, 5 to 7 minutes. Serve over cooked pasta.

Spaghetti tuna olives and capers - An excellent combination of flavors
Recipe:
Doses for 3 people
Ingredients:
200 g. of spaghetti
50 gr of tuna
2 cloves of garlic
5 tablespoons of tomato sauce
3 teaspoons of pickled capers
5-6 pitted olives (green or black)
chilli pepper oil to taste
Procedure:
Chop olives and capers.
In a pan, heat the garlic in large pieces.
After a minute, add the capers and the olive pieces,
let it cook for another minute and then
remove all the garlic pieces
add the tuna, dividing it into small pieces
Now pour in the tomato puree, season with salt and cook
the sauce for few minutes.
Add 2 teaspoons of the chili oil
(according to your taste). The sauce is ready!
Cook spaghetti in salty boiling water and drain
when cooked al dente.
Drop in the pan and mix well with the sauce.
Serve at the table!
Absolutely do not add grated cheese! (As in any dish with pasta and fish).

Here's an ideal summer pasta with fresh tomatoes as the main attraction. Feta complements the tomatoes beautifully, and the heat of the pasta and hot garlic oil make the cheese meltingly soft. Ingredients
1 1/2 pounds tomatoes (about 3), seeded and cut into 1/2-inch pieces
1/2 cup Kalamata or other black olives, pitted
1/4 pound feta cheese, crumbled
3 tablespoons drained capers
3 tablespoons chopped flat-leaf parsley
1/4 teaspoon salt
1/4 teaspoon fresh-ground black pepper
3/4 pound spaghetti
6 tablespoons olive oil
3 cloves garlic, minced
