Blueberry-Cornmeal Cake | Southern Living
This moist, berry-studded cake gets its great texture from medium-grind cornmeal. Fresh blueberries are in abundance this time of year in the South. With the u-pick farms and farmers’ markets, you can easily get carried away and come home with enough berries for cobblers, smoothies, muffins, and breads. Fortunately, blueberries freeze well, so if you don’t bake up all of your berries in a day or two, you can store them in the freezer.

Cornbread makes a perfect backdrop for blueberries, which burst as they bake, creating little pockets of juice that keep the muffins tender.
Freezer-Friendly Instructions: The muffins can be frozen in an airtight container or sealable plastic bag for up to 3 months. Thaw for 3 – 4 hours on the countertop before serving. To reheat, wrap individual muffins in aluminum foil and place in a preheated 350°F (175°C) oven until warm.

2 Flax Eggs
1/2 cup Vegan Vanilla Yogurt
1/3 cup Sunflower Oil
1/2 cup Brown Sugar (coconut sugar or maple syrup)
The juice of a whole Lemon
2/3 cup Water
1 1/4 cup Flour (you can use spelt flour)
1/2 cup Almond Flour
1/2 cup Yellow Corn Meal (the polenta one)
1 tsp Baking Powder
1/2 tsp Baking Soda
The zest of a whole lemon
200gr Organic Blueberries

I know. Lots of people call muffins a breakfast food, but with all the fat and sugar they can pack, aren't they really more like dessert? Not the muffin I'm going to make for you today. The trick is in smart ingredient swaps. Instead of oil, eggs, or milk, this muffin recipe calls for low-fat plain yogurt. Cornmeal adds a great texture, and the blueberries and orange bring a bright, sunny flavor. So good -- and good for you!

Because the muffin batter isn't made up of the traditional ingredients, it will be a bit different than what you're used to. Not to worry. In the video, I'll show you what the correct texture should look like and give you tips on how to work with it so it will be as tender as can be. 1 cup fine yellow cornmeal
1/3 cup granulated sugar
