How To make Blueberry Oatmeal Drop Biscuits
1 c Unbleached flour
1/2 c Whole wheat flour
1/2 c Rolled oats (NOT instant)
1/3 c Oat bran
1 ts Baking powder
1/2 ts Baking soda
3/4 ts Salt
1/2 ts Ground cinnamon
1/4 c Cold unsalted butter, cut in
-1/4-inch pieces 1/4 c Granulated OR firmly packed
-light brown sugar 1 lg Egg
1/2 c Milk
1/4 c Plain yogurt
1 c Fresh blueberries
Preheat the oven to 400F. Lightly oil a large baking sheet. In a large bowl, combine the flours, oats, oat bran, baking powder, baking soda, salt, and cinnamon. Add the butter and cut it in with a pastry blender until it is broken into very small pieces. Stir in the sugar. In a small bowl, lightly beat the egg, milk, and yogurt together. Make a well in the center of the dry ingredients; pour in the liquid ingredients and stir lightly. When there are only a few traces of the dry ingredients visible, fold in the blueberries. Using about 1/4 cup of the batter for each biscuit, drop evenly spaced mounds onto the prepared baking sheet. Bake for 20 minutes, turning the baking sheet midway through so they brown evenly. Serve warm. These biscuits look and taste like oversize blueberry oatmeal cookies. Makes 12 biscuits. Blueberry cookies are an incredible treat especially when it it blueberry season. I make them up a few times a year. Friends and family always enjoy them and ask for the recipe. Give them a try and let us know what you think. print the recipe:
As always, there are a few adjustments you can make to the recipe. I love blueberries, but you can use blackberries, cranberries, etc. The batter will go with just about any berry. You can even make the cookies without berries.
The recipe uses granulated sugar but brown sugar can be used as well. For that matter, you can use confectioner's sugar. I have to mention that the vanilla extract is options too.

Drop Biscuits have a beautiful golden brown crust that is nice and crispy. Yet when you split one in half, inside it is wonderfully soft and tender. These biscuits are so easy to make; no kneading, rolling, or shaping the biscuits. All you do is mix the ingredients together with a fork, and then 'drop' the batter by heaping spoonfuls onto you baking sheet. Serve the biscuits with soups or stews, or cut in half and spread with butter and jam and/or clotted cream. These also make a great Breakfast Sandwich; just cut in half and fill with a slice of cheese, a bacon or sausage patty, and a fried or scrambled egg. They also make a delicious Strawberry Shortcake.

BLUEBERRY BISCUITS W/ LEMON GLAZE
(Makes 12)
Preheat oven to 400 degrees F.
Lightly grease or line a large cookie sheet with parchment paper
2 cups all-purpose flour
1/2 cup sugar
2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup whole buttermilk
1 large egg at room temperature
1/4 cup butter, melted
1 cup fresh or frozen blueberries
GLAZE:
1/2 cup powdered sugar
1 tablespoon fresh lemon juice
1. In a large bowl add the flour, baking powder, baking soda, and sugar. Whisk well. Set aside.
2. In a medium bowl add the buttermilk, egg, and melted butter. Whisk well. Add to flour mixture; stir just until moistened. Gently fold in blueberries.
3. Drop by 1/3 cupfuls onto prepared cookie sheet 1-inch apart.
4. Bake on the middle rack of oven for 15-18 minutes, or until golden in color. Cool slightly.
5. In a small bowl, combine powdered sugar and lemon juice. Drizzle over biscuits.

INGREDIENTS
225 g all purpose flour
7 g baking powder
2 tbsp white sugar
1/2 tsp salt
pinch ground nutmeg
300 ml heavy cream
125 g blueberries, frozen or fresh
INSTRUCTIONS
1. Preheat the oven to 220C 428F and line a baking sheet with parchment paper.
2. In a medium mixing bowl, combine the flour, sugar, salt, baking powder, ground nutmeg and blueberries. Stir in half of the heavy creamd until well combined. Add the remaining heavy cream and stir until incorporated.
3. Scoop batter into mandarin size balls using 2 spoons. Place on lined baking sheet.
4. Bake in preheated oven for about 25 minutes or until golden to deep brown.
