2 c Sifted flour
4 ts Baking powder
3/4 c Sugar
1 ts Salt
1 c Frozen or canned blueberries
-(drained) OR: 1 c Frozen or canned tart
-cherries (drained) 2 Eggs
1/2 c Melted butter
1 c Milk
CINNAMON AND SUGAR TOPPING: 1/8 ts Cinnamon
1/2 c Sugar
Paper muffin cups Servings: 12 - 14 DIRECTIONS: Place paper cups in ungreased muffin tins. Sift dry ingredients together in large bowl. Add blueberries or cherries to dry mix and mix until well coated. In a small bowl, beat eggs well. Add melted butter and milk. Quickly stir liquid mixture into dry mix. Do not overmix as overblending will cause a tough texture. Fill muffin cups 3/4 full, and sprinkle lightly with cinnamon topping. Bake at 400-F for 20 minutes until brown. Healthy Blueberry Muffins???? This recipe is gluten-free, refined sugar-free & dairy-free! These muffins are such a yummy dessert or snack idea and you could even make these for breakfast☀️???? The recipe is super simple and uses ingredients you might already have at home! These muffins are so moist and super delicious????
I used Finnish bilberries in these muffins but you could of course use regular blueberries as well whichever you have available where you live☺️ Finnish bilberries grow wild in Finnish forests and the berries are smaller than cultivated blueberries. The skin of Finnish bilberries is dark blue and the inside is purple, that’s why the muffins are so purple????
Ingredients:
2 mashed bananas
2 eggs
1/4 cup peanut butter (60 ml)
1/3 cup gluten-free flour mix (or regular flour if not coeliac/intolerant/IBS sufferer etc.) (80 ml)
1 teaspoon baking powder
1/2 - 1 teaspoon cinnamon
1 cup of blueberries/bilberries fresh/frozen (240 ml)
1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Fold in the blueberries
4. Scoop to muffin tins lined with muffins liners (or greased muffin tins)
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 15-20 minutes or until a toothpick inserted to the center comes out clean
6. When the muffins have cooled a little bit, transfer them to a wire rack and let cool and enjoy! (Store in an air-tight container)

Ingredients:
2 medium eggs
pinch of salt
30 g sweetener(stevia/or your choice)1/4 cup
1 teaspoon vanilla paste/ vanilla extract
120 g yogurt (1/2 cup)
50 ml vegetable oil(1/5 cup)
1 apple
70 g blueberries(1/2 cup)
100 g rolled oats(1 cup)
7 g baking powder(1/2 tbsp)
bake 20-25 minutes at 180°C/ 360°F

Cherry or Blueberry Muffins
BLUEBERRY MUFFINS or CHERRY MUFFINS
3/4 cup margarine or butter, softened
1 1/2 cups sugar
Cream butter and sugar.
3 eggs
Add eggs and mix.
2 1/4 cups milk
3 tsp vanilla extract
1 tsp salt
3 Tbsp baking powder
Add and mix.
5 cups flour
1 1/2 -2 cups blueberries or cherries
Add 1/2 flour, fruit, 1/2 flour.
Do not over mix.
You can choose to add your berries after putting dough in the muffin tins so you can control where and how many berries per muffin so that the berries don't all sink to the bottom of the muffins.
Grease muffin tins or use cupcake liners.
Makes 24 muffins.
Bake 375° for 20-25 minutes
