SHOPPING LIST:
1 lb. Isernio's Hot Italian Sausage (5 links) or 1 lb. Roll
3 pre-made pizza crusts (Boboli or Mama Mary's) or can make from scratch
12 oz. Pureed Tomatoes
6 Tbsp. Olive Oil
3 cloves Garlic, minced
1 tsp. Salt
1 tsp. freshly ground Black Pepper
3 Tbsp. fresh Basil chopped (for sauce)
1/3 cup whole milk Mozzarella cheese, grated
1/3 cup Pecorino Romano cheese, grated
3 tsp. crushed Fennel seeds (optional)
1 1/2 tsp. Hot Pepper flakes (optional)
3 Tbsp. fresh Basil chopped (for topping)
LET'S COOK:
Heat a non stick 12 skillet over medium heat. Remove casings from link sausage or slice roll open, and place in skillet, break up and crumble sausage with a flat wooden spoon. Cook sausage until it just loses it's pinkness. Don't over cook or brown sausage! Set aside.
In a small bowl, combine pureed tomatoes with olive oil, garlic, salt, freshly ground black pepper and chopped fresh basil.
Pre-heat grill to high. Brush bottom of crust with olive oil. Place oiled side down on grill for about 1- 2 minutes, or until it's browned. Transfer carefully with tongs, off the heat to the pizza peel, grilled side down. Close lid on the grill to keep it hot. Add 1/3 of the cheese, then 1/3 of the tomato puree. 1 tsp. crushed fennel seeds and 1/2 tsp hot pepper flakes (optional), and 1/3 of the crumbled sausage. Turn off one side of the grill, and place pizza on cool side with lid closed for 5 minutes, or until the cheese has melted. While pizza is cooking, coarsely chop more fresh basil. Remove with pizza peel and top with basil, drizzle with olive oil and repeat these steps for the 2 remaining pizza's.

????Homemade Mushroom Pizza Recipe????
In this video from Food Talks, you will learn how to make mushroom pizza at home. This cheese and mushroom pizza is also really delicious with a variety of different mushrooms. We made our pizza the fast and lazy way (kids at home!) but you could sauté the mushrooms in a screaming hot pan before putting them on the pizza. You mush know that mushroom pizza sauce is only made from the melted cheese and some olive oil drizzled at the end. So it's what we call a white pizza. This pizza also cooks well in a regular oven, even though in this video we used our Roccbox pizza oven.
Instructions for conventional oven:
Preheat a pizza stone/steel or baking sheet for 30-40 minutes at the max temperature your oven can reach. Then cook the cheese and mushroom pizza on the pizza stone for about 5-6 minutes, or until the mushroom pizza crust is cooked and has a nice brown color, and the cheese is melted.
Ingredients for 1 pizza:
250g pizza dough ball (Pizza Dough Recipe➡️
Mozzarella cheese, or a mix of your favorite cheeses
2-3 mushrooms, thinly sliced
Olive oil (mushroom pizza sauce)
Semolina (to stretch the pizza)
Instructions:
1. Preheat your oven at maximum temperature.
2. Cover pizza dough ball with semolina. Stretch the pizza dough by pushing the air to the edge with your fingers. Flatten the dough leaving a small edge. Lift the pizza dough and use gravity to stretch the pizza dough.
3. Cover the mushroom pizza base with cheese and mushrooms. Slide onto pizza peel.
4. Launch the pizza into the oven and cook at maximum temperature (not broil!) for 5-6 minutes, or until the mushroom pizza crust has a nice color and the cheese is bubbling.
5. Finish with a drizzle of olive oil. Salt & pepper to taste.

Frequently Asked Questions:
Q. Which mushroom is best for pizza?
A. Small white mushrooms, cremini, Portobello, Chanterelles, Porcinis, etc. Whatever you find! We don't recommend that you use canned mushrooms before they will release too much water and make your pizza watery.
Q. How to prepare mushroom for pizza?
A. Wash the mushrooms and dry very well by squeezing them in paper towel. Thinly slice. You could put them uncooked on the pizza, or you could sauté them in a screaming hot pan before putting them on the pizza.
Q. Can you reheat mushroom pizza?
A. You sure can! Preheat your oven and baking sheet at maximum temperature for about 30 minutes. Then launch the cold mushroom pizza onto the baking sheet for 2-3 minutes, just enough to let it reheat.
Q. What are mushroom pizza toppings?
A. It's typically a white pizza, so the mushroom pizza toppings are cheese (a variety), mushrooms and a bit of olive oil.
