????Ingredients for the Best Banana Bread:
3 ripe bananas, mashed with a fork
½ cup butter (1 stick) at room temperature
3/4 cup white sugar (or use 1 scant cup of honey)
2 eggs, room temperature
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ tsp real vanilla extract
1 cup walnuts, toasted and coarsely chopped
½ cup raisins

How To Make A Moist Whole Wheat Bread Loaf In A Breadmaker
This is one of my favorites whole wheat bread recipes for a bread machine. This soft, warm, and delicious whole wheat bread loaf is super easy to make and relatively foolproof for any breadmaker.
As many wholemeal bread recipes result in a dry, hard, and dense loaf, then this recipe will give you moist, melt-in-your-mouth homemade bread. This bred will be the true star of the dinner table or even great for breakfast.

Here is how to bake bread machine wholemeal loaf:
Ingredients and Instructions
Add 300 g of white bread flour.
Add 300 g of whole wheat flour.
Add 2 tsp of sugar.
Add 2 tsp of salt.
Add 2 tbsp of milk powder.
Add 1 tsp of yeast.
Add 400 ml or 13 oz of water.
Add 2 tbsp of olive oil.
Set the program' Whole Wheat' or 'Standard Bake' - loaf size 'Large' - crust 'Medium.'
Let the bread machine do its thing.
Serve with butter, best when fresh and warm.

EASY VEGAN DATE LOAF | LAST MINUTE BAKING
I thought this might be a little series of the days when I just feel like baking and eating something real sweet and real simple with whatever is in the pantry.

1 cup chopped dates
2 tbsp golden syrup
1 cup boiling water
1 1/2 tsp apple cider vinegar
1 1/4 cup flour
1/2 cup oat bran
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
3/4 cup brown sugar (can of course reduce the sugar if you want a less sweet loaf!)
1/2 cup walnuts
In a bowl place chopped dates, golden syrup and add boiling water. Let the dates soak for at least 10-15 minutes.
Add ACV.
In another bowl add all dry ingredients except walnuts and mix well.
Add dates + water and mix.
Fold in walnuts.
Place batter in a lightly greased loaf tin (I always line the bottom with parchment paper as a extra precaution) and bake at 180C for 40-50 minutes or until skewer comes out clean.
(Half way through you might want to check how your loaf is doing, if it's getting quite dark, cover with foil to prevent burning!)
Let cool in pan for 10 mins before taking it out and letting cool completely on a rack.
This is especially good warm right out of the oven with vanilla ice cream on top.

Chunky Banana Bran Muffins

Ingredients
1 cup unprocessed wheat bran
1 cup buttermilk (shaken)
4 tablespoons unsalted butter, at room temperature
1/4 cup light brown sugar, lightly packed
2 extra-large eggs, at room temperature
6 tablespoons unsulphured molasses
1 teaspoon grated orange zest
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup raisins
1 cup large-diced bananas
1/2 cup chopped walnuts
Directions
Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.
